Pseudo Civet Team 24 Team of Chemical Engineers from Left to Right: Brad Dotinga, Jack Randall, Luke Argabright, Nick Bosch, Luke Peterson Our team is designing an enzymatic coffee bean treatment process that will mimic Kopi Luwak and Black Ivory coffee. These specialty coffees are produced from coffee beans that have been digested by Indonesian civets and elephants and we believe that we can mimic the partial digestion in a chemical reaction. Using pepsin, a common mammalian enzyme, and hydrochloric acid we aim to closely replicate a mammalian stomach that produces the enriched coffee beans.
