IT’S TEXAS INDEPENDENCE DAY ONE HUNDRED SEVENTY-NINE YEARS AGO, TEXAS BROKE AWAY FROM MEXICO, JUST TO BE SUCKED INTO THE US NINE YEARS LATER

Texans are a proud people. I say this with the utmost respect and admira-tion. Almost thirty years ago, when I first visited Texas, I could sense that

something was very different. Texans care about each other and they love their families. Texans love the open road and definitely love their wide open spaces. A Texan loves being a Texan regard-less of where they may have been born. As long as you live in this state, you are a

Texan. Texans love their guns and will defend Texas to the death. Texans love their independence. Texas Independence Day is the cel-ebration of the adoption of the Texas Declaration of Independence on March 2, 1836. With this document, signed by 59 people, settlers in Mexican Texas of-ficially broke from Mexico creating the Republic of Texas. Davy Crockett was one such Texan. He came here, from Tennessee, to explore Texas originally, but found him-self fighting along other Texans to win their independence from Mexico. Crockett’s famous quote “You all can go to hell, I’m going to Texas,” as was

spoken in his disgust with Tennessee politics, is repeated 180 years after it was first uttered as it were legend. Crockett is as much a factor in Texan Independence as was Stephen F. Austin, Jim Bowie, Sam Houston, and William Travis as well as the government of the United States. Today Texas is a large fraction of what is left of the Republic of Texas. If Texas Nationals had their way, Texas would enjoy a 2nd Independence Day as well as the status of being the first nation/state to secede from the United States successfully. That is unless Ha-waii gets to it first. As a separate nation, Texas would remain a very large and geographically diverse state, with oil reserves and other natural resources. Since Texas borders Mexico it places us in a great position to trade with both the US and Mexico. The only weak point Texas would have is in building and supporting her own military. In the meanwhile, join us as we cel-ebrate her history as wish Texas a happy Independence Day! CORRECTION: In the interview with the owners of I-45 Diner, I incorrectly, in one in-stance, identified one of them as Hector Garcia. His name is Hector Gomez. I apologize for the error.

BIG THICKET DISTILLERY’S DOG TROT VODKA AWARDED SILVER MEDAL AT THE 2ND ANNUAL ‘AMERICAN CRAFT SPIRITS’ AWARDS IN AUSTIN, TX Conroe, TX - Big Thicket Distillery’s critically ac-claimed Dog Trot Vodka took home a 2nd Place Silver medal at the 2nd Annual American Craft Spirits Competi-tion for 2015, hosted in Austin, TX. Big Thicket Distill-ing’s Dog Trot Vodka secured the silver medal for the ‘Craft Vodka’ category. Entries for the American Crafts Spirits competition were due on January 26th, the judging process took place on January 31 and February 1. Winners were selected and announced in February 2015. Eighteen judges drawn from a wide array of spirits professionals composed the judging panels. The judges are picked to provide a mix of experi-ence between various areas within the spirits industry—re-tailers, mixologists, educators, and journalists/reviewers. Distillers or consultants with a vested interest in a spirit were not be able to preside over flights in that category. “We are absolutely thrilled to have been awarded the sil-ver medal as a result of entering our Dog Trot Vodka into this prestigious competition,” said Daniel Bass, co-founder of Big Thicket Distilling Company. “It’s such an honor that the American Craft Spirits Awards, after perform-ing blind tastings of hundreds of spirits from all over the country, named Big Thicket Distilling’s Dog Trot Vodka an award winner in the Craft Vodka spirits category, earning it a silver medal. Self-taught chefs Cliff Evans and Brandon Woll may very well have written the textbook on how to open and run a food truck.

How else to explain the burgeoning success of Black Garlic, an unas-suming school-bus-yel-low food truck situated in a strip center parking lot along Tomball Parkway? When asked how they settled upon this particular loca-tion, Chef Evans told me it was really quite simple; nobody else he had approached

would allow him to set up shop on their property. Regardless of their locale, business has been brisk since Black Garlic’s January 16th launch five short weeks ago. “The response has been incred-ible, especially among the local food groups. We never dreamed we would do so well so quickly,” said Evans. Surely you’ve heard the cliché that the three most important fac-tors when opening a business (and especially a restaurant) are location, location, location. But based on the number of restaurants that close their doors within the first year (about one in four according to Bloomberg.com; their research indicates that the 90% figure bandied about for years is nothing more than an urban legend), it would seem that a lot of restau-rateurs forget an equally important mantra: while a great location cannot overcome a poor product or opera-tions, a poor location can be over-

come with a great product and operations. And that’s exactly why Black Garlic has done so well in such a short period of time and most likely will continue to do so, because of the emphasis Evans and Woll have placed on sourcing the best possible ingredients to create their eclectic menu. Artisan breads from local bakery Slow Dough, artisan cheeses from Houston Dairymaids in the Heights, prime meats from Creekstone Farms and 44 Farms, fresh organic produce from Triple S Farms and Atkins Farms; with ingredients this good in capable hands, you’re bound to get great results. Take Black Garlic’s burgers for example. Crafted from Wagyu beef, prime grade brisket

and chuck roast, the meats are ground fresh daily to create half-pound patties that are the cornerstone of all the burgers on the menu. On my first trip to Black Garlic a week after they opened, I started with the Sauced Pretzel ($13), served on a grilled pretzel bun with crispy, thick-cut bacon, crispy fried kale, and creamy gorgonzola cheese. I also ordered a side of chimichurri fries ($5). The burger was cooked to a perfect medium rare as I had requested it with a warm red center, and it was all at once beefy, juicy, and melt-in-your-mouth tender. Add to that the combination of flavors and textures from all the supporting players and you have what I consider one of the best bacon and blue cheese burgers around. The fries were crazy good as well. I was apprehensive about my fries becoming soggy after being tossed in chimichurri; after all, it’s a lot thinner sauce than its close cousin pesto, because of the addition of vinegar. But the sauce was deftly applied and created wonder-fully bright, herbaceous fries that were the perfect counterpoint to the rich umami flavors of the burger. To put ketchup on these fries would be criminal. Rather than try a dessert, I opted instead to finish my meal with Arancini di Buffalo ($8), five panko-encrusted and fried balls of risotto with a filling of mozzarella and cheddar cheeses and buffalo chicken, served with a side of homemade blue cheese dressing. With crispy exteriors and creamy, flavorful interiors of velvety risotto, gooey cheese and spicy chicken, this is a must-try appetizer if you’re a fan of arancini. On a more recent visit, I tried the Three Texas Pigs ($8), which are billed as Texas-style egg rolls with a filling of pulled pork, pâté, pancetta, and mozzarella cheese, served with an Asian inspired dipping sauce. Of ev-erything I’ve had thus far at Black Garlic, this is the one item I didn’t much care for and hope that the chefs will rework. The egg rolls were crispy, but I also found the wrappers to be thick and somewhat chewy. I also am at a loss as to what pâté and an Asian dipping sauce have to do with Texas. I get the

An admission of my own; I always thought this classic poem about nature’s beauty was written by a woman. I mean, look at the first name right? Well, I may have missed that one, but I was “right-

on” in my column last year. I wrote on why The Woodlands Township should free itself of the 30 year $1.5 million an-nual extortion it pays the city of Houston annually to not be annexed. State and federal funds tar-geted for municipal development would

be available with incorporation. The privilege of sovereignty does bring addi-tional expenses but much of this is offset by the savings and new funds available. A city council, with jurisdiction over the municipality, would possess the power to regulate development. Cur-rently the clear-cutting of the trees in the Creekside section of The Woodlands highlights this problem. The reason most residents move miles away from urbanized centers and sacrifice the time and cost of commuting long distances are (in differing order of priority): less crime, better schools, and a more natural environment. The tragic deforestation of the Old Town Spring area since I first moved there in the early 80’s in the name of development has made a noticeable

decrease in air quality and increase in noise pollution from traffic and trains. I was encouraged to discover that the hike and bike trails behind Timberlane in the Cypress Creek woods are currently being expanded and paved. Eventu-ally to crossing over to the Mercer Park woods and Arboretum to allow greater enjoyment of the wooded areas there. I have always envied the paved biking and walking wooded trails in The Wood-lands. The Villager is printing an in-depth ar-ticle about a recent petition drive to stop the clear-cutting that is occurring just outside The Woodlands Township’s mas-ter planned designed boundaries. It cur-rently has over 1,000 signatures. I have my doubts whether such actions will have much effect with The Woodlands Development Company or The Howard Hughes Corporation presidents. They didn’t need to adhere to the same codes regulating the use of “green spaces” separating houses, roads, and businesses. Less wooded areas means more lots for construction and that equates to bigger profits. Matthew Burton has posted the peti-tion online on change.org and requested publicly that any media outlets for the area publicize this. The Public News wants to be included in this effort. I would encourage any and all residents of the area who value the defining quality of “The Woodlands” being preserved to google his name or Creekside clear-cutting petition, and sign it. With all of the commercial and road construction occurring here, assuring it doesn’t become a concrete jungle is urgent.

The Led Zeppelin reissue campaign continues in 2015, turning the spotlight on the double album Physical Graffiti. The deluxe edition of the group’s sixth studio album will arrive 40 years to the day after the original debuted on February 24, 1975. As with the previous deluxe editions, Physical Graffiti has been newly re-mastered by guitarist and producer Jimmy Page and is accompanied by a disc of companion audio comprising previously unreleased music related to the original release. Certified 16x platinum in the U.S., the commercial success of Physical Graffiti was equaled by its critical reception. Generally

regarded as one of the greatest double albums of all time, the original 15 tracks represent a creative tour de force that explores the band’s dynamic musical range, from the driving rock of “Custard Pie” and an acoustic arrange-ment of “Bron-Yr-Aur” to the Eastern raga of “Kashmir” and funky groove of “Trampled Un-der Foot.” The companion audio disc that accompanies the deluxe edition of

Physical Graffiti has seven unreleased tracks, including rough mixes of “In My Time Of Dying” and “Houses Of The Holy,” as well as an early mix of “Trampled Under Foot” called “Brandy & Coke.” All the unreleased companion tracks offer fans a chance to hear well-known songs from a different perspective, including the Sunset Sound mix of “Boogie With Stu” and “Driving Through Kashmir,” a rough orchestra mix of the band’s eight minute opus “Kashmir.” Also featured is “Everybody Makes It Through,” a strikingly different early version of “In The Light” with alternate lyrics.

We all have the same twenty minutes and a blank sheet of paper. We all look at the model, the paper, back and forth until without a sound lines from brushes and pencils mark place in space. The gesture of the figure, the spirit, emerges from the blank space in a matter of moments. Placement, where is the head, the backbone in a swoop, relaxed and intense at the same time, with an awareness of scale, propor-tion. From top to bottom and back to the top again, creating, destroying, mak-ing adjustments. The page is filled in three minutes, now for the relationships, where the hand is touching the foot, or the side. The hand in simple parts that we come back for clarity, not the fingers yet, just where the fingers will be. The background comes to play as it is outside the figure as dark space, the figure light and on the other side the op-posite, shaded figure with the background light. The edge of the figure in the drawing dissolves as others appear and lines are rhythmically clarified thin to thick and back to thin again.

On March 3rd, the Nashville-via-West Texas troubadour Ryan Culwell will release Flatlands, his first album in more than 8 years, on Lightning Rod Records (Jason Isbell, Billy Joe Shaver, Amanda Shires). Today, Rolling Stone Country is debut-ing the album in its entirety one week in advance of release. Writing in Rolling Stone Country, An-drew Leahey said Flatlands sounds “like the Bible Belt cousin to Bruce Springs-teen’s Nebraska,” as well as “the score to some long-lost Cormac McCarthy film, its tracklist split between roadhouse-worthy roots rockers, front porch county songs and haunting, blue collar ballads about life and loneliness in the Lone Star State.” Culwell’s latest effort has been received to great praise, garnering acclaim from the likes of CMT Edge, Folk Alley, Guitar World Acoustic Nation, The Bluegrass Situ-ation, and many more. Last week, PopMatters shared an exclu-sive live performance of the “I Think I’ll Be Their God.” Recently, The Bluegrass Situation premiered the track “Red River” and said “Like Jimmie Dale Gilmore, Rodney Crow-ell, Nanci Griffith and so many others be-fore him, Ryan Culwell wears his heritage on his sleeve, right next to his heart.” Guitar World Acoustic Nation debuted “Never Gonna Cry,” the first single to be released from the album, and called it “masterfully crafted and artfully delivered.”

Last Fall, St. Paul, Minnesota’s Hippo Cam-pus released their debut EP Bashful Creatures to great praise, garnering acclaim from the likes of NME, Neon Gold, Interview Maga-zine and many more. The EP was produced by Low’s Alan Sparhawk and mixed by Brad Bivens (Kings of Leon, Ingrid Michaelson, Dan Wilson). The band is pleased to announce that they have signed with Grand Jury (Twin Peaks, Avid Dancer, Seoul) to re-issue Bashful Creatures EP on May 5, 2015, and to release forthcoming EP in the spring. In addition to their previously announced national tour with The Mowgli’s and Fences that kicks off on March 25th in San Francisco, CA, Hippo Campus have announced they will showcase at the 2015 SXSW Music Confer-ence in Austin, TX (see schedule below). Bebe’s Cravn’ Cajun is an authentic Louisiana Cajun food truck on Rayford Road in Spring, TX. It is owned by Louisiana transplants Carl and D’ette Hamilton from Baton Rouge, LA by way of Plaquemine, LA. Opened in December 2012, they have really gained a following for their specialty Cajun dishes and especially their Cajun Boiled Crawfish (best in the area in my opinion). Staple dishes like Louisiana fried catfish and

shrimp, red beans and rice, jambalaya, fried alli-gator, shrimp n’ grits, hushpuppies and homemade remoulade. Surprisingly, they have very good hot wings too. If you are lucky you will catch one of

their off menu specials like smothered pork chops and succotash. Bebe’s food is so good that they have people drive from Pearland and even Dallas for their food. If Crawfish Boiling was an art, Carl would be the Vincent Van Gough of it. You have to taste it for yourself to understand. Nick: Where did the name Bebe’s Cravn’ Ca-jun come from and why did you choose to open

a food truck?Bebe’s: That is our son’s nick name (BeBe) and we were always craved that home style Cajun food when we would go out to eat. Unfortunately, we couldn’t get the taste we wanted at the price we wanted, so we found an easy, fun, inexpensive way to do it our selves and share with the community. We opened a food truck for the flexibility of hours, because we both have other jobs. We have seen too many brick and mortar restaurants fail, and with a food truck we have less overhead and more location options.

Nick: Tell me about the inspira-tion for your menu. Bebe’s: We combined a little of my mother’s and grandmother’s recipes with Carl’s mother’s and grandmother’s, and also a bit of our own .

Nick: What are your most popular menu items and what do you think you are famous for? Bebe’s: Gator has become most popular, but Crawfish is what we are famous for. The Shrimp N’

Cravn’ Cajun expect that they have never had before? Flavor. When most people hear Cajun their first thought is “HOT”, but real Cajun is about Flavor with a little kick. Anyone can add extra spice for flavor, but our recipes have complex flavors.

Nick: Why is your Boiled Crawfish so darn good? Bebe’s: The flavor is in the water, not shaken on the shells like others around. We think just shaking some seasonings on the outer shells is cheating and doesn’t give the actual meat of the crawfish the authentic flavor. Nick: Do you do special events or caterings?Bebe’s: Yes, on the off season we go to the local

breweries like B-52’s Brewing Co. and Southern Star Brewery. We have done festivals such as the Conroe Cajun Catfish Festival and we also do some special event catering jobs. I also sampled the Black Garlic Grilled Chicken Breast Sandwich ($10), served on brioche with sun-dried tomato aioli, Havarti cheese, tomato confit, and balsamic glazed baby arugula and micro greens, as well as a Pulled Pork Slider (1 for $4 or 3 for $11), served on a mini Hawaiian style roll with Ha-varti cheese and Suicide Slaw, which is also available as a side dish ($3).The chicken sandwich is far better than what you’ll find elsewhere. The meat portion was

generous (either two breasts or one very large one divided) and the aioli, sweet tomato con-fit, and tart, peppery arugula made for a tasty combination of flavors.The pulled pork slider also satisfied. The slightly smoky pork with the sweet bread and tart coleslaw was everything a pulled pork sandwich should be. The slaw had a nice heat level to it, although Chef Evans confided to me he’s had to tone it down a bit because of the amount of sliders sold to parents feeding their kids.Also on this trip, I finally got around to sam-pling dessert, and boy am I glad that I did. I ordered the Blue Grilled DCD as well as the Sweet Revenge DCD (both 1 for $5 or 3 for $12), and I’m torn as to which was my favor-ite. (DCD stands for double cheese doughnut,

by the way, and let me tell you these are unlike any doughnut you’ve ever had.)The former features gorgon-zola and moz-zarella cheeses with a homemade blueberry compote sandwiched be-tween two inverted doughnut halves, and the latter fea-tures cheddar and mozzarella cheeses with brown sugar candied bacon between the same. After assembly, the DCDs are grilled in butter on a flattop to crisp the exteriors and melt the cheeses.The end result is nothing short of phenomenal. Whoever came up with the idea of making what is essentially a grilled cheese sandwich between two donut halves deserves a James Beard award. Like right now! I’m about a twenty minute drive from Black Garlic where I live in Spring, and I can honestly say I wouldn’t think twice about making the drive there just for a DCD.In addition to serving top quality food, service both times I visited was very quick and friendly. Seating is somewhat of an issue for now; a giant wooden spool (used for large cables) serves as a makeshift table where one can stand and eat. But the chefs have purchased tables and chairs for dining and are

trying to work out the logistics of how to store the furniture during non-business hours. Just an example of the growing pains all new busi-nesses must overcome.Potential food truck entrepreneurs could learn an invaluable lesson by visiting Black Garlic and seeing and tasting firsthand what truly determines whether or not a business succeeds more so than location: great products and great service.
