Business Profile

Rocky Mountain Meats has created a dynamic $1.8 million year business that fully utilizes all meats and meat by-products through wholesale, retail, custom, value added and pet food markets. The facility efficiently operates with 14 staff, easily maintaining production of 100 hogs/week, 20 beef/week, sausage production, and pet food manufacturing. Approximately 1000 wild game processing orders are received during the annual hunting season-with approximately 80,000 lbs of sausage production being added to the custom cutting and wrapping. Recent automation and capacity expansion projects have increased productivity and quality while ensuring exceptional shelf life, labeling, and distribution can be achieved. Production capacity will permit 100 hogs and 100 beef/week-a total of 133 animal units/week.

A rapport has been established for acquiring temporary foreign workers, with several staff coming from Switzerland, Germany, and the Philippines.

Wholesale pork cuts are marketed throughout central Alberta, with weekly service to Calgary and Edmonton. Contracted livestock supplies ensure quality and safety of products being offered for sale. All pork products are guaranteed for freshness, with several Good Manufacturing Practices being implemented to ensure extended shelf life capabilities for retail display and merchandizing. Beef Processing consists of custom processing for local area producers and producing retail and wholesale cuts/products. Full slaughter, cutting, wrapping, and freezing services are offered. Several secondary processors throughout central Alberta also slaughter and age beef for shipping as whole sides or ¼’s. Rocky Mountain Meats purchases cattle for its value added production and manufacturers several thousand kilograms of ground beef, sausage and patties for provincial distribution.

Sausage/Value Added Processing- a fully equipment sausage kitchen with multi truck smokehouse, silent cutter, vacuum stuffer, and packaging equipment is available for production capacities of up to 20,000 kg/week. Bacon, ham, and sausages are produced and marketed to Sobey’s, Co-op, AG Foods, and several independent stores.

Pet Food- Rocky Mountain Meats Ltd. has developed a full line of raw and cooked pet food and treats for wholesale distribution to breeders and pet food stores. This product line utilizes slaughter and processing by-products to create a nutritious pet food blend renowned in central Alberta. Approximately 90% of all processing by-products are utilized through the facility, increasing profitability and eliminating the need for costly disposal.

Food Safety- Rocky Mountain Meats is committed to providing safe and wholesome products. The facility is dedicated to compliance to provincial and federal legislation, with significant investment commitments in Meat Facility Standard compliance and product labeling. Recent audits from Alberta Agriculture and Rural Development have identified that Rocky Mountain Meats Ltd. Scores in the upper percentile of Meat Facility Standards.

Equipment

Packaging

A VC999- RS420c Rollstock machine was installed in 2010. This multi-die continuous

roll automated vacuum packaging machine produces high quality packaging at a

rapid rate. The Rollstock is ideal for portion packaging of fresh food and product

innovations. The thermoforming technology allows cost-efficient packaging of

products for the attractive presentation of the packaged goods at the point of sale.

Xtravac 640 Double chambered vacuum package with multi height removable trays. This machine was purchased new in 2010, and offers superior performance for packaging primal, hams, and other large products.

Reiser SuperVac Dip/Shrink (AT5ER)- An automatic hot water bath used to shrink vacuum bags around meat products, creating a flawless full view of packaged contents. Shelf life and appearance are improved.

L-Bar Semi-Automatic 16X20” model SMC1620 adjustable speed wrap and seal machine. This wrap and seal works with the attached Danmark heat sealer. This equipment is great for packaging pet treats/bones and chews to maintain freshness and increase shelf life.

Value Added Processing

Handtmann VF 100 vacuum filler with linker, 700 lb hopper capacity with 500 lb electric lift. This automatic portion control filler is operated by touch screen controls for precision filling speed, link volumes, and twists. The vacuum filler can be used in a continuous flow with the Poly-Clip automatic FCA 3461 clipper for producing multiple product chubs. Four stainless steel and 6 plastic product dump carts are included.

Silent Cutter- Modern Butcher Supply Model 200. This 90 litre 3-6 knife silent cutter with discharge arm provides exceptional emulsifying and/or mixing capabilities for a wide variety of value added products. The 30 hp motor permits the chopping of large batches of semi-frozen product. The discharge arm unloads all product into the vacuum filler dump carts for ease of production and minimal product handling.

The Vemag 2 to 6 truck thermal processing oven 11’X8’X8’ provides forced air, microprocessor controlled smoking and cooking of value added meats. Natural smoke, automatic cleaning, and +/- 1°C operation ensures optimal heat transfer, yield retention, colour, and flavor distribution. Twelve smoke carts, 48 stainless jerky trays, and 1000 aluminum sausage sticks are included.

Rotating Drum Vacuum Tumbler- Saskatton Welding Services Model HLVT 190 5 hp. This vacuum tumbler can be easily adjusted for massaging of whole muscle, ground, and marinated products to ensure optimum protein extraction, cure distribution, or flavor enhancement. It is easy to clean and adjustable for a variety of volume loads.

Pickle Injector- A fully reconditioned 64 needle automatic conveyor injector with adjustable injection pressure. A 19”X82” conveyor allows for small or large boneless/bone in products to be injected. Improved cure distribution and yield can be achieved with large or small processing volumes.

Electric cooking kettle- EF Zuber provides for hot water cooking capabilities of up to 100 kg. Full stainless construction provides ease of cleaning and safe cooking of foodproducts.

Jireh Industries US-12-A Automatic Jerky Slicer. Whole muscles can be simply dropped through the machine feed, rapidly producing even strips of meat product ready for curing and/or seasoning.

Hollymatic 54 Pattie Machine with conveyor and automatic paper interleaving system to increases production capability and eliminate paper chips. Approximately 2000 portions of 1/6 lb or ¼ pound can be produced with paper inlay between each product portion.

Kill Floor Equipment

Cincinnati Boss 5 hp “Cincination” hog dehairer and twin scald tank. All components rebuilt with external propone supply to in-line torches. Equipment set-up and water supply can effectively process 30 market hogs/hour. Paddles, bearings, and motor have recently been rebuilt and/or reconditioned.

Beef landing hoist and spreader bar system. Hoist can easily accommodate large carcasses.

One Karl Schermer and one Applied Electronics (brand new) amperage based adjustable hog stunners with scissor tongs. Cardiac stun capabilities are available.

Building Equipment

All rails and switches are powder coated and maintained on a regular basis. Rails are 11 ft high with 2 ½ ft spacing to achieve airflow and appropriate temperature control. A drop rail into the cutting room assists in carcass handling and breaking.

A new hot water boiler provides substantial water capacity for processing and sanitation operations.

Several compressors, fans, cooking units have been upgrades and/or replaced throughout the facility.

A Hotsy hot water pressure washer is used for deep cleaning connection throughout all processing areas.

A 2003 Dodge Dually 1 ton flat deck (160,000km) and a 2008- 14 000 lb hydraulic lift dump trailer are used for waste disposal.

5 ton refrigerated delivery truck with insulated cube for product storage and distribution.

The facility is equipped with 300 stainless rollers, 105 stainless S-hooks, and 110 stainless hog gambrels.

19’X27’ covered lairage is available with an additional 15’X25’ receiving area and a series of steel constructed outdoor pens and alley way.
