In September, we were named one of the “Best Wines Stores in San Francisco” by the online magazine, SFist. When I started my business 39 years ago I can remember there were three independent wine and spirits retailers, and today there are more than three dozen in this 7x7 city. Reflecting on nearly four decades of business—in the same location, no less—we know that none of our success could have been possible without all of your support.   • 6GEMS FROM BURGUNDYBurgundy spans from Auxerre in the north to Mcon in the south, from Chablis down to the Cte Mconnais. The mixture of limestone, clay and marl soils make this the most celebrated region in the world for world class Chardonnay and Pinot Noir. But that is not to say that every bottle is a winner. We go through great lengths to source, taste and handpick only the best of the best. Below are a few highlights from our vast selection.

    Domaine Robert-Denogent Pouilly Fuisse Les Reisses 2012 $45In 1988, Jean-Jacques Robert saw a potential in southern Burgundys Cte Mconnais that was decades ahead of his time. Using family vineyards, he started bottling single-vineyard wines to showcase the areas finest terroirs. Les Reisses is one of Burgundys rare monopole vineyards and is planted to nearly 90-year-old vines in clay soils. A real showstopper, this Chardonnay gives most Meursault a run for the money!

    Domaine Lucien Boillot et Fils Pommard 1er Cru Les Frmier 2012 $89Pierre Boillot is fortunate to farm some of the Cte dOrs finest hidden gems. Among them is his small, pedigreed slice of this old-vine premier cru parcel, which he farms sustainably. Pierre de-stems 85% of his Frmier to create a Pommard unlike any other. While many Pommards are wild and rustic, even muscular, Pierre seems to have tamed the beast magnificently. Generous notes of raspberry and blueberry flavors, earthy layers and mineral intensity culminate into a graceful finish. Simply unforgettable.

    A. et P. de Villaine Bourgogne Rouge "La Fortune" 2013 $40In addition to directing one of the most highly acclaimed estates in the world, Domaine de la Romane-Conti, Aubert de Villaine and his family farm a small property in the Cte Chalonnaise that produces world-class wines. Such is the blessing of La Fortune, a 5.5-acre lieu-dit of Pinot Noir in Rully. Left with two-thirds of its stems, La Fortune is still generous in fruit and tender on the palatean absolute delight that can be appreciated now and over the next several years.

    Domaine J. Chzeaux Nuits St.-Georges 1er Cru Les Vaucrains 2012 $79If Les Vaucrains is regarded as one of Nuits-St.-Georges finest premier crus, Jrme Chzeaux may be its greatest producer. Above all, Jrme seeks purity in his wines; and lets face itall things pure tend to be a little shy. His Les Vaucrains is only starting to show the beauty that it will become. Nervy, bright and persistent, it shows great potential. Grab a bottle for your cellar and let it sleep for a while.

  • 7GOING GREENWhats the difference between organic, biodynamic and natural wine? you may ask. Alas, the answer is not so simple, and more often than not, the terms refer to the way the grapes are grown more than how the wine is made. In essence, all three embrace natural farming practices. Their real difference lies in the winemaking. Generally speaking, all three use indigenous yeasts and minimal (if any) use of sulfur. Natural wines are not regulated like organic and biodynamic wines are, but they mostly avoid technological intervention and use of sulfur. Wines made from organic or biodynamically grown grapes employ very stringent vineyard practices in conjunction with the lunar calendar, with biodynamic methods often having much stricter requirements. What does this mean for you? You can feel good about supporting responsibly farmed products and safer standards for farmers, and you can count on fewer allergic reactions or headaches in the morning. Green is definitely the way to go!

    HOLIDAY MEAL WINE PAIRINGSIts never too early to start thinking about your holiday mealor what youre going to drink with it, for that matter. Whether its a dinner for two or 12, making it special creates lifelong memories. Will it be an heirloom turkey for Thanksgiving? A traditional beef brisket for Hanukkah? How about a honey-roasted ham for Christmas? The list of details to plan can be dizzying. Let us lend a hand by taking some of the guesswork out of your wine selection with this easy guide.

    QUANTITIES

    Start by considering your guests and your budget. Are they occasional or more regular drinkers? How long will they be staying? How much are you willing to spend? Its a good idea to budget 1-2 glasses of wine per person per hour, keeping in mind that each bottle contains about six 4-ounce glasses. If it looks like your guests will be staying for at least a few hours, its worth playing it safe by planning at least half a bottle of wine per person. While some of your guests may likely bring a bottle to share, its smart to have a little extra on hand. After all, most wine and liquor stores are closed on the holidays.

    VEGETARIAN DISHES & FISH

    With vegetable dishes and fish, its often best to aim for medium-bodied whites and light-to-medium-bodied reds. Big-bodied, tannic reds can easily overwhelm the subtlety of vegetables and fish dishes. Likewise, high-acid whites can be delicious with oysters on the half-shell but can tear apart a beautiful filet of halibut. For you salmon and tuna lovers out there who prefer to drink red, Pinot Noir, Greek and Corsican reds make fabulous pairings.

    PORK & POULTRY

    White meat demands more subtle wines. Of course, it all depends on how youre preparing your dish and the sauces and seasonings youre using. Think medium-to-full-bodied whites and light-to-medium-bodied reds. For spicier preparations, consider off-dry whites like Riesling or high-acid reds like Beaujolais or Barbera. For rich, cream sauces, a soft Loire Valley Chenin Blanc will do the trick nicely, as well as a California Chardonnay, a Santorini white, a white Rhne or Spanish Garnacha Blanca. For those who like red with their ham, we recommend a soft Pinot Noir or a refreshing Lambrusco. If youre keeping your preparations simple, the skys the limit!

    BEEF & LAMB

    When pairing wine with beef, youll need to consider the cuts of meat you choose, as well as your method of cooking. The best rule of thumb is to match the texture of the wine to the texture of the meat. Slowly cooked brisket or lamb shanks can be deep and flavorful, but also soft and tender. In this case, youll want an aged Nebbiolo, a Nuits-St-Georges or a Bordeaux. On the other hand, a marbled rib-eye or shoulder might demand something richer and more tannic to cut through the fat, such as a California Cabernet, a spicy Rioja, or a Rhne red.
