Now that we have begun to thaw fromthe winter, it is time to feel the warm sun-shine on our faces again. March is alwaysa beautiful time of year. The plants arestarting to bloom, so the vibrant colorsfrom the azaleas, and honeysucklesemerging are breathtaking. This monthwill signify the rebirth of plants and therejuvenation of fauna. The soothingsounds of birds chirping again, travelingback from their southern migration andthe Cobia biting in the Broad River andthe Port Royal Sound is a sure sign thatSpring is upon us.

So as we experience warmer weather,give homage to the patron saint ofIreland on St. Patrick’s day and watchthe final playoff rounds of this collegebasketball season; each of us can ben-efit from truly appreciating the spring-time, whether it is taking a walk on thewaterfront at sunset, riding your bikeon the Spanish Moss trail, taking awalk up the lighthouse on HuntingIsland State Park or simply a trip downto Paradise Pier. Whichever way youchoose, take time to enjoy our city ofBeaufort and all its beauty and history.

Beaufort National CemeteryLocated on Boundary Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead.

Henry C. Chambers Waterfront ParkThe Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal).

Hunting IslandLighthouse & State ParkA breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132’ tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an oceanfront maritime forest with showers, biking and nature trails. For camping info and lighthouse hours call (843) 838-2011.

John Mark Verdier HouseWithin the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335.

Parris Island Recruit Depot MuseumAn all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951.

Sheldon Church RuinsBuilt in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort.

The Parish Church of St. Helena(circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 505 Church Street, Historic Downtown.

Union ChurchThe Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.

March 14 La Donna del Lago— Met Premiere, 12:55pmBel canto superstars Joyce DiDonato and Juan Diego Flórez join forces for this Rossini showcase of vocal virtuosity, set in the medieval Scottish highlands and based on a beloved novel by Sir Walter Scott. DiDonato is the “lady of the lake” of the title, and Flórez is the king who relentlessly pursues her, their

vocal fireworks embellishing the romantic plot in this Met premiere production conducted by Michele Mariotti.

A performance of A Midsummer Night’s Dream. Shakespeare Rep continues its Season of wonders with a lovely adaptation of one of the most popular Shakespeare’s plays. This time set in 1967, the Summer of Love, the production brings a lot of happy vibes and great music to fuel the action masterpiece.

Place feta in a small bowl. Drizzle with oil and honey. Add pepper and toss gently. Shortly before serving, halve grapes lengthwise. Gently toss grapes and pear slices. Spoon fruit mixture over individual servings of baby spinach. Scatter the feta over the fruit. Garnish with basil.

Green Grape and Feta Cheese Salad1/4 lb feta cheese, crumbled2 teaspoons extra virgin olive oil2 teaspoons honey2 1/2 cups green seedless

grapes (about 1 pound)

fresh ground pepper1 pear, ripe but firm (Bartlett

or Anjou)6-8 fresh basil leaves, thinly slicedbaby spinach

chopped spinach, thawed drained & squeezed dry in paper towels

1 (8 ounce) package cream cheese, softened

1/2 cup mayonnaise

1/2 cup sour cream1 envelope ranch dip mix1 jar bacon bits4 green onions, chopped1 (8 count) package 10-inch

spinach tortillas

Appetizers

In medium mixing bowl, combine cream cheese, sour cream and mayonnaise. Beat in dip mix. Add green onion, bacon bits and spinach (broken up into small clumps). Mix thoroughly. Spread mixture onto tortillas, leaving a 1/2" space around edge. Roll up each tortilla tightly, and wrap each in plastic wrap. Chill for several hours or overnight. To serve, cut off ends and cut into 1/2" slices.

Green Beans and Blue Cheese1/2-1 teaspoon Dijon mustard2 teaspoons cider vinegar2 tablespoon finely chopped

shallots1 1/2 cups sliced almonds,

toasted

2 -3 tablespoons olive oil2 lbs fresh green beans, ends

trimmed1/2-3/4 cup blue cheese,

crumbled salt and black pepper

In a small bowl whisk together mustard, vinegar, shallots and oil. Prepare a bowl with ice water. In a saucepan with a small amount of water, blanch the beans until firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour. Remove the beans to a bowl and dry well patting with paper towels. Drizzle the dressing over the beans; toss to combine. Season with black pepper and a pinch of salt. Add in blue cheese and almonds; toss to combine. Transfer to a serving plate or bowl, and sprinkle with more sliced toasted almonds. Serve at room temperature.

2 (20 ounce) packages frozen spinach

1 large carton cottage cheese6 eggs2 cups Bisquick

1 lb shredded cheddar cheese1/2 cup melted butter1/2 teaspoon salt2 tablespoons lemon pepper

Thaw spinach and squeeze out excess water. Melt butter in 9x11" pan and coat the pan with it before adding it to the bowl. Combine all ingrediants in a bowl, mix well. Pour into pan bake at 350 degrees for 30-45 min.
