seafood dishes. Or almost any dish on the menu, for bubbles likes most cuisine!
J. Laurent ‘Méthode Ancestrale’ & Doux [Sweet]– Limoux, France 12 Do not be afraid! I repeat, do not be afraid! Yes, the word ‘sweet’ is there. But here’s the skinny: this is our best-selling glass of bubbles for two reasons: the wine is super tasty, and it loves our big flavors. In addition, the wine makes sweet love to all things spicy. And spices reign supreme here at Fhima’s!
Domaine Chandon Brut Rosé, California 15
Strawberry, watermelon, and cherry tones dominate this sparkling wine. You may detect a creaminess and tropical nuance in the mix of all the refreshment going on here.
Moscato - Vietti D.O.C.G d’Asti, Piedmont, Italy 12 Scoff at Moscato? Think it’s just cheap sweet plonk? Well, best believe this ain’t no Barefoot nonsense. This
offering from Vietti is one of the finest Moscatos made. The lightly frizzante bubbles, aromatics and taste are astonishing! When approaching the intense flavors of Fhima’s cuisine, this pairing should be considered: LOBSTER BISQUE!!!!
WHITE WINES
Pikorua SAUVIGNON BLANC Marlborough, New Zealand 12
Smack your nostrils with this textbook-Kiwi-zipper of a Sauvignon Blanc. Lime and tart lemon persist here.
Pullus PINOT GRIGIO Štajerska, Slovenia 12
Pinot Grigio is usually the Bud Light of white wine. But not this one! This Slavic Pinot Grigio is slightly pink and is a bit rounder that it’s white counterparts. This unique offering marries up to our cuisine quite well
Delille CHALEUR BLANC Columbia Valley, Washington 15
The groove is in the heart of this hypnotic juice! If Rhianna’s music producer suddenly decided to craft a chart topping white wine, this would be the hit! Chaleur Blanc translates to ‘Warm White’ which is an oxymoron, just like the wine itself; as it is soft but expressive – easy yet complex. The wine simply whispers out an opera of flavors, Pavarotti style.
Quilt CHARDONNAY Napa Valley, California 20 If the ultra popular Caymus made a Chardonnay, this would be it! And since the Wagner family makes this, one could
indeed call it just that. It fits the Caymus pedigree, as it’s a bombastic Chardonnay full of buttery tones and tamed oak.
Michel Picard Le Petit Perroy CHENIN BLANC Vouvray, France 12 Out of all the white wines, if you want the perfect match for Fhima’s cuisine, drink this! Chenin Blanc with just
a touch of sweetness to its overall profile yearns for the spice; a spiciness present in a good number of dishes here.
Elektrisch RIESLING Germany 12
Elektrisch translates to Electric, and that is exactly what’s up: Electric Riesling!!! This wine is full of zippiness and a lightning bolt of intense granny smith apple aromatics keeps one coming back to it again and again. The Minnesota market seems a bit flooded with subpar Rieslings, but this find is a notable exception.

RED WINES Musar ‘Jeune’ CAB/SYRAH/CINSAULT Bekka Valley, Lebanon 15
Pick me! Pick me! For the love of our Mediterranean fare, this is the perfect foil for so many of our dishes! I could write for days about why you should drink this Lebanese wine right this very second. The wine engages with its assorted bright red fruits enhanced with a flurry of eastern spices. Musar begs for tagine and so much more.
Belle Glos “Balade” PINOT NOIR & Syrah Santa Maria Valley, CA 18
Behold the biggest Pinot Noir you have never seen! So dark in hue, many Sommeliers simply believe they must be secretly adding a darker-skinned grape like Syrah to the wine, for it just doesn’t exhibit the color typically associated with the varietal. Smoother than velvet pants; this wine slaps!
Saint Cosme SYRAH Cotes-Du-Rhone, France 14
Literally just off the boat, this 2020 vintage is chock full of flavor and one of the boldest Rhone wines ever. In rock and roll terms, the wine can melt faces! And being 100% Syrah makes it a B-side rarity.
Ridge ‘Three Valleys’ ZINFANDEL Napa Valley 15
The Ridge winery has a long history of making some of the finest Zinfandel and blends in all of California. This lower tier selection is a real sleeper and can compete with their higher priced offerings. Zinfandel has a special place when considering Fhima’s cuisine, as it pairs well with a good number of dishes.
Penfolds CABERNET & SHIRAZ South Australia 13
Milk Chocolate and Eucalyptus aromatics swirl together in perfect harmony, and the wine is filthy rich in dark berry flavor. These days Aussie wines are about as popular as Kenny G… but best believe that wines from down under can still perform. It’s just like LL Cool J said, “Don’t call it a comeback, I’ve been here for years.”
Bousquet ‘Reserve’ MALBEC Mendoza, Argentina 12 Argentinian Malbec is kind of like the new Merlot. The bouquet of Bousquet is inviting with its baking chocolate
nuances and deep dark fruit flavors. While the flavors linger in the mouth, one can rejoice they are pioneers in that all the wines they produce are organic.
Joleté ‘Summit View’ CABERNET SAUVIGNON Walla Walla, Washington 20 Take a break from Napa and get into this pimpin’ juice! Dark and smooth as velvet with no hard edges, the wine is Is a 1st round knock out! A Sunday punch of flavor sits on the palate…………..yup, still sitting…………And down for the count.
