Granite Falls Resident Recently Celebrated 104th Birthday
By Merri Lee Jackson {GFJ}…We had the honor and privilege to sit down last Sunday afternoon and talk with Minnie Bell Starnes. Mrs. Starnes turned 104 years old on May 6th. Minnie is such a spirited lady and made us chuckle several times with her quick wit and humor. Minnie Bell Starnes was born May 6, 1910 to G. Etta Graham and J. Sylvanus “Van” Starnes. She is one of 9 children including Ed, Gaither, Harmon, Roy, Mattie, Hattie, Wesley and Richard. She was married on April 21, 1928 to Sherman B. Starnes, her neighbor that lived “just over the hill.” This made her a double Starnes. When asked how long she had been married, her reply was “as long as he lived.” She is mother to 6 children that include Dale Starnes (deceased January 2014), Conley Starnes, Bedford Starnes, Wayne Starnes, Peggy Starnes Huffman and Thelma Starnes Hildebrande and grandmother to 18 grandchildren and 18 great-grandchildren. There are 18 five generations in her family and she is responsible for 103 fam-ily members with two more on the way. Her parents moved from Hickory and settled in the Grace Chapel area on Petra Mill Road. The Starnes family is known for being good farmers and Minnie Bell was no exception. She grew up on a tobacco farm and worked on the farm from “sun up to sun down.” She was often known to tell the kids, “Let‟s go hoe the garden while we rest.” It wasn‟t easy to farm 90+ acres but Minnie Bell was a hard worker and when asked what work she did on the farm, her answer was “everything.” Minnie and her husband later moved closer to Granite Falls onto Dudley Shoals Road where they operated a tobacco farm. They built a new house over 60 years ago and Minnie still lives there. Many years ago they even grew tobacco where the Fairvalue in Granite Falls is now located. Along with farming, Minnie loved to cook and made cakes to sell. She also raised chickens and sold the eggs to buy groceries. Another past time was crocheting and quilting. Many of her children and grandchildren own a quilt handcrafted by her. Minnie is very outgoing and loved to shop usually going to town every Saturday. When shopping, she is known for buying an outfit from head-to-toe and every-thing had to match. Above photograph provided by the family. Story continued on page 4...

Amish Onion Cake Ingredients
3 -4 medium white onions, chopped 2 cups cold butter or 2 cups margarine, divided
1 tablespoon poppy seed 1 1/2 teaspoons salt
1 1/2 teaspoons paprika 1 teaspoon fresh coarse ground black pepper
4 cups all-purpose flour 1/2 cup cornstarch
1 tablespoon baking powder 1 tablespoon sugar
1 tablespoon brown sugar 5 eggs
3/4 cup milk 3/4 cup sour cream
Instructions In a large skillet, cook onions in 1/2 cup butter over low heat for 10 minutes. Stir in the poppy seeds, salt, paprika and pep-per; cook until golden brown, stirring occasionally. Remove from the heat; set aside. In a bowl, combine the flour, corn-starch, baking powder and sugars. Cut in 1-1/4 cups butter until mixture resembles coarse crumbs. Melt the remaining butter. In a bowl, whisk the eggs, milk, sour cream and melted butter. Make a well in dry ingredients; stir in egg mix-ture just until moistened. Spread into a greased 10-inch spring form pan. Spoon onion mixture over the dough. Place pan on a baking sheet. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean. Serve warm.

Sometimes when we reach a certain age, we tend to slow down; less activity, less travel but not Minnie Bell. She was in her 90‟s when she took her first plane trip. She flew to Arizona to visit her daughter and that was only the beginning. She has traveled to many states including New York, Wash-ington and has been overseas to England. Once you meet Minnie, it comes as no surprise that she is full of life. She only stopped driving at age 95. Also, in her 90‟s, she “SKYPED” for the first time, talking to her daughter Thelma, in Arizona that she had not seen in 10 years. When viewing her daughter on the computer screen, she touched the screen and asked her daughter “Is that your real teeth?” Minnie has come from a life of horse & buggy to the age of computers & technology. When people are told Minnie‟s age, they are not only amazed at the number of years she has lived, but also that she has l i v e d a l o n e . Minnie has only recently needed some assistance at night. She is a very independent lady and has no qualms about telling people what to do and what she does or doesn‟t like. We asked what one word would describe Minnie; “spunky?” “feisty?” words she did not like. She said she “just want myself!” However you describe her, she is very “spirited” and a joy to be around. Minnie celebrated her birthday with special rec-ognition from her home church, Dudley Shoals Baptist Church. Minnie Bell is the oldest member in the church. When asked if there is anything she hasn‟t done in her life that she would have liked, her response was “I guess I got everything done.” In above photo provided by the family: Minnie Bell and Sherman Starnes along with their six children.

Granite Falls Town Council Awards Contract To Build Veterans Monument
By Mark Jackson {GFJ}...At the regular town council meeting held on Monday, June 2, 2014 the Granite Falls Town Council awarded the contract to build the Veterans Monument to Wilkie Con-struction of Lenoir, NC. The town council also approved a capital projects budget ordinance for the construction of the Veter-ans Monument at the Recreation Center. The total cost of the project is $145,723 with revenue sources including the loan from the Town of Granite Falls of $45,453, the sales tax refund on materials of $5,000, the use of $87,990 from 2014 Veterans Memorial Revenue and $7,279 from the Veterans Memorial Restricted Fund Balance. Approximately 210 names have been collected so far and the Veterans Memorial Committee is still actively seeking donations for the monument. If you are interested having your or a family mem-bers name included at the monument, contact the Granite Falls Town Office. Veterans Memorial Committee Chairman Sam Erby thanked Granite Falls Town Manager Jerry Church and Town Engineer Clarence Lockamy of the Wooten Company for all of their hard work and assistance. Erby also thanked Alicia White for de-signing the Memorial. Veterans Memorial Com-mittee and Town Council Member Jim Mackie stated that this is “a labor of love and we would have never done this without Sam Erby.” Nine World War II Veterans will be attending the dedication among many other dignitaries which will be held on November 11, 2014 at 11:11am.

Madison Bumgarner Named National League Pitcher Of The
Month For May

{GFJ}...Former SCHS Spartan Pitcher Madison Bumgarner was named National League Pitcher of the Month for May for the first time. Bumgarner was 5-0 in six starts, with 48 strike-outs and a 2.08 ERA. He was third among N.L. pitchers in ERA and fifth in opponents‟ batting aver-age (.203). In 39 innings, 24-year-old Bumgarner allowed just 28 hits. He joined Jason Schmidt (2004), Ray Sadecki (1987) and Juan Marichal (1963) as the only modern-era Giants to record at least five wins and strike out at least 48 in a month while not taking a loss. Bumgarner helped the Giants go 19-8 in May and extend their lead in the division. The opening day starter is the first Giant to win pitcher of the month since Tim Lincecum in June, 2009. He‟s the first Giant to take any MLB award since Hunter Pence was player of the month last September. Source: sfgiants.com

Essential Fatty Acids and Women’s Health
In this article, the discussion will be focused on EFAs and fibrocystic breasts, osteoporosis, pregnancy and lactation and cardiovascular disease. Fibrocystic Breasts Virtually all knowledgeable providers agree that the term “fibrocystic breast disease” should be abandoned in favor of more accurate physiologically based descriptions for many reasons. Benign breast conditions that are present in almost all women to some degree or another should probably never have warranted the label of “disease”. Tender or lumpy breasts com-prise one of the most common motivations for women entering the health care system. Since painful breasts are not always lumpy, and lumpy breasts are not always painful – and neither is usually abnormal – it would be more useful to create descriptive categories of symptoms and conditions to replace the generic term “fibrocystic”: physiological, cyclical pain and swell-ing/mastalgia/breast modularity or diffuse lumpiness and dominant masses. For the purpose of the discussion, I will be addressing mastalgia. Breast pain is a common disorder which affects about 40 percent of women of reproductive age and seriously disrupts the lives of around 10 percent of women. It is a disorder precipi-tated by ovarian hormones, yet no consistent abnormalities of circulating ovarian hormone levels have ever been detected. The conclusion has been that women with breast pain have breast tissue which is unduly sensitive to normal amounts of ovarian hormones. Results of scientific research and clinical trials have consistently shown that evening prim-rose oil (EPO) is effective in relieving breast pain and premenstrual cyclic breast pain. In the course of treatment, it has been detected that women with breast pain have unusually low concentrations of gamma linolenic acid (GLA ) metabolites. When supplemented with EPO, a particularly concentrated source of GLA, the levels of GLA metabolites increase in the breast and the concentration of saturated fats decreases in the breast. Breast pain has also been as-sociated with a high consumption of saturated fats and a very low fat diet can often relieve such pain. The pain and tenderness of benign breast disease associated with “cyclic mastalgia” has been alleviated with EPO, the only one of the many EFA oils to be scientifically studied in relation to mastalgia. One of the best examples of studies that were done was in 1985, when 291 women took 3 grams of EPO for three to six months. Almost half of the 92 women with cyclic breast pain experienced improvement (either no pain, or easily-bearable pain), compared with one fifth of the patients who received the placebo. For those women who experienced breast pain throughout the month, 27 percent responded positively to the EPO, compared to 9 percent on the placebo.

What is especially important to the discussion, and perhaps even more relevant to the discussion on breast cancer, is that ovarian hormone levels are normal in women with breast pain and are not changed by therapy with GLA. Yet, the abnormal sensitivity of the breast tissue to normal hormone levels does appear to be reduced by GLA supplementation. The proposed mechanism for the relief of breast pain with GLA is a shift in the balance of membrane fatty acids towards normal; the steroid re-ceptors in the breast then have a reduced affinity for estrogen, and the excessive sensitivity of the breast to estrogen is lost. Osteoporosis Osteoporosis is a growing concern with postmenopausal women due to its prevalence in 75 year old and older women, as well as the disability and even mortality it can cause. Although EFAs have not been talked about much in relationship to this disease, there is a growing body of evidence and research to warrant our attention. EFAs have been shown to increase calcium absorption from the gut, in part by enhancing the effects of vitamin D and reducing urinary excretion of calcium. EFAs also increase calcium that is deposited in the bone, improve bone strength and stimulate the synthesis of bone colla-gen. Other findings have demonstrated that patients with osteoporosis who are given fish oil show an increase in serum calcium levels, and others given a fish oil/EPO combination had increased osteocal-cin as well as increased procollagen, suggesting that these supplements may enhance bone formation. In animal studies, EFA deficiency leads to the development of severe osteoporosis along with increase calcification in the kidneys and walls of the arteries. This is similar to what we see in elderly patients with osteoporosis, i.e. loss of bone calcium and increased calcification in soft tissues, particularly the arteries and the kidneys. These calcifications outside the bone may be more dangerous than the osteo-porosis itself, since the great majority of osteoporosis related deaths is due to a vascular problem such as a blood clot formation. Supplementing the diet with oils high in GLA (EPO, Borage, Black Currant) and ALA (Flax and Black Currant) may improve absorption of calcium and enhance the calcium content in the bone. Supple-menting with fish oils (EPA and DHA) will improve the blood levels of calcium and help to correct a deficient calcium effect in the bone. Pregnant and Nursing Women Everyone would agree that good nutrition during pregnancy bodes well for a healthier pregnancy and a healthier pregnancy and a healthier baby. Adequate calories, a well-balanced diet of complex carbo-hydrates, proteins and fats with whole foods, and a minimum of sugar, refined carbohydrates and satu-rated fats form the foundation of good nutrition. EFAs have a unique role during pregnancy because of the rapid development of new cell growth, new tissues and new organ systems in a developing fetus. All cells throughout the human body are surrounded by a membrane composed mostly of phospholipids containing essential fatty acids. Phospholipids play a major role in determining the nature and struc-ture of cell membranes. The type of fat is what determines the type of phospholipids in the cell mem-brane.

Essential Fatty Acids and Women’s Health
A phospholipid composed of a saturated fat or a trans-fatty acid is of lesser quality than a phospholipid composed of an EFA. A deficiency of EFAs in cellular membranes makes it almost impossible for the cell membrane to perform its function as a selective barrier between what passes in and out of the cell. A healthy membrane leads to healthy cells and healthy tissue, then to healthy organs or body systems and finally healthy bodies and minds. This evolution of health is dependent on EFAs because of their critical importance to the cell membrane and the development and formation of new tissues in a grow-ing fetus. Fetal development is associated with a high EFA requirement, and this supply is dependent on the amount and availability of EFAs from the mother. In a longitudinal study, the EFA status in pregnant women progressively decreased during their pregnancy. The tendency was for the first child to have a higher docosahexaenoic acid (DHA) status than her subsequent children. (DHA is a major fatty acid in the central nervous system.) This higher DHA status is correlated to head circumference, birth weight and birth length. This implies that increasing the DHA level in the fetus could promote fetal growth and improve the prognosis of premature infants. A maternal vegetarian diet has an influence on the essential fatty acid status of the newborn. Studies have shown that intakes of linoleic acid and the ratio of linoliec to alphalinolenic acid (ALA) were higher in vegetarian women, and eicosapentainoic acid(EPA) and DHA were absent from their diets. The vegetarian women had lower EPA and DHA in plasma phospholipids, and birth weight, head cir-cumference and length were lower in the infants born to vegetarians as compared to ominvores. This study raises the concern that vegetarian women give birth to infants with less DHA, lower body weight and possibly slower growth of the brain, although it did not appear to be related to the outcome of the pregnancy. A diet higher in essential fatty acids and fish oils or supplementation with a daily complex of these fats and oils during pregnancy provides vital nutrients that supply necessary nutrition for optimal fetal development. Cardiovascular Disease Diets that are high in cholesterol and saturated fats contribute to the poor fat ratios and elevated cho-lesterol levels that contribute to premature coronary heart disease. Lowering the cholesterol in the diet will lower the blood cholesterol in most individuals. Replacing saturated fatty acids in the diet with polyunsaturated fatty acids from vegetable oils will lower both total cholesterol and LDL („bad‟) choles-terol levels. Fish oils contain the omega-3 fatty acids EPA and DHA which are associated with heart protective effects. Fish oils prevent clots, inhibit inflammation in the vessels walls, cause vasodilation and promote a regular heart rhythm. Fish oils may also lower blood pressure and triglycerides. People who consume a diet rich in omega-3 oils from either fish or vegetable sources have a much lower risk of heart disease and heart attacks. Increasing the amount of omega-3 fatty acids with fish oils and/or flax oil can lower fibrinogen levels and therefore reduce atherosclerosis and blood clot formation. This then leads to less coronary heart disease or stroke.

Increasing the omega-3 fatty acids can also lower blood pressure. Either fish oil supplements or flax-seed oil are effective in this blood pressure lowering effect. Fish oils produce a greater effect than flax-seed oil, but the dose may need to be quite high, up to 10 fish oil capsules daily. Hundreds of studies show that omega-3 fatty acids lower triglyceride levels. The main feature of these results involves the EPA and DHA rich fish oils, but flaxseed oil supplementation can produce some similar benefits. Re-member, flaxseed oil contains ALA, an omega-3 fatty acid that the body can convert to EPA.
Frequently Asked Questions Q. What is the difference between brown flax seed and golden or yellow flaxseed? Is one better than the other? A. One flax seed is not better for you than the other. According to the Flax Council of Canada, brown flax seeds provide the same nutritional benefits as golden (or yellow) ones. Both brown and golden flax seeds are excellent sources of lignans and dietary fiber, and both contain more than 50% omega-3 alpha-linolenic acid. While some people prefer yellow-colored seeds in their cooking, brown flax seeds add the same nutrition to the diet as golden ones. More brown seed is grown commercially than golden seed and is therefore more commonly found. Q. If flax oil has a bitter taste does it mean it is rancid? A. No, not necessarily. Growing conditions (i.e., temperature, rainfall, etc.) during flax cultivation affect the or-ganoleptic properties of the seeds and oil. Less than ideal growing conditions may be the reason for slightly bitter tasting oil. Variations in oil taste from lot to lot may be due to variations in growing conditions season to season. In addition, high lignin flax oil normally has a slightly bitter taste. This is attributed to the lignin-rich flax particu-late present in the oil. (Lignans are phytonutrients found in flaxseeds which are being studied for potential cancer-protective benefits.) If flax oil is rancid, it will have a strong „off‟ or rancid odor. Q. Is it okay to freeze liquid flax oil? Does freezing extend its shelf-life? A. Yes and yes. It is perfectly safe to freeze flax oil; in fact, it is a good idea unless you are using it on a regular basis in which case all you need to do is keep it in the refrigerator. Freezing will increase the shelf-life. Keep in mind, the oil will freeze or solidify if kept in the freezer. Q. What is oleic acid? A. Oleic acid is a fatty acid belonging to the omega-9 family of fatty acids. It is a monounsaturated fatty acid com-monly found in vegetable oils. Olive oil, rich in monounsaturated fat, is approximately 75% oleic acid. Q. What’s the difference between Evening Primrose Oil (EPO) and Borage Oil? A. EPO and Borage Oil are two essential fatty acid nutritional oils rich in omega-6 fatty acids. The primary differ-ence between the 2 oils is their omega-6 GLA (gamma-linolenic acid) content. Borage oil is nature‟s richest source of GLA with 20-24% GLA. EPO contains 8-10% GLA.

Lightning Strikes Tree On Jones Park Drive Last Friday
By Mark Jackson {GFJ}…On Friday, May 30, 2014 the Sawmills Volunteer Fire and Rescue De-partment responded to a call on Jones Park Drive just off Highway 321A and found a tree that was apparently struck by lightning. The tree fell on a carport of a residence but did not appear to cause any major structural damage. Thankfully there were no injuries reported. When the Sawmills Vol-unteer Fire and Rescue Department arrived there was an odor of gas in the residence and they worked quickly to make sure everyone was safe. At the time they were uncertain of what caused the odor of gas. Electrical power at the residence was disrupted as well. Piedmont Natural Gas and Blue Ridge Electric were both called to the scene. Our community is very fortunate to have such dedi-cated and hard working Volunteer Firefighters. Photos below by Mark Jackson {GFJ}.

Accident On Dudley Shoals Road Last Week
By Mark Jackson {GFJ}...On Tuesday, May 27, 2014 at approximately 1:45pm an accident oc-curred on Dudley Shoals Road just past the “5 points” intersection. A vehicle traveling towards Granite Falls sustained a vicious impact with the back end of a Bobcat Skid Steer Loader. The driver of the vehicle, Jesse Wise of Granite Falls, stated that all he saw was a cloud of dust and then his car was on its side. Wise had to stand on his steering wheel to open the passenger side door and then climb out. Thankfully he did not sustain any seri-ous injuries but did go to the hospital to be checked out. The Bobcat was actually brushing off the road at the time of the accident which apparently caused the cloud of dust. The Bobcat driver was taken to the hospital with unknown injuries but did not seem to be life threatening thankfully. The Bobcat, which weighs approximately 8000 lbs. according to the tow truck driver, amazingly showed practi-cally no damage. Photograph below by Mark Jackson {GFJ}.

Registration For The 2014 Black-berry Princess Pageant Is Now Open
By Stephanie Oxford...The 13th annual NC Blackberry Festival, presented by the Caldwell Chamber of Commerce, has now opened regis-tration for the 2014 Blackberry Princess Pag-eant, sponsored by Koinonia Apartments.
The long running festival will begin Satur-day, July 12th at 10am with the pageant fol-lowed by the opening ceremonies. The pageant has two categories: Tiny Miss Pageant for ris-ing K through rising 1st grade and the Little Miss Pageant for rising 2nd through 3rd grades. The registration fee is $20.
The contestants will be asked to share their personality in 30 seconds or less by telling a story, reciting their favorite bible verse, telling jokes, singing, cheering, or talking about their favorite activities. They can do just about any-thing that reflects their personality.
They should wear casual attire, such as their Sunday dress. No formal pageant wear or makeup is allowed. Contestants will be judged on appearance, personality and a simple inter-view. Pageant winners will be given the oppor-tunity to ride in the Lenoir Christmas Parade on December 5th.
The NC Blackberry Festival is one of the pre-miere festivals in the region. There isn't any-thing that says summer better than blackber-ries! Obituaries
Helen Hagaman Gragg Helen Gragg, 74 of Hudson went home to be with her Lord and Savior following a lengthy illness on Friday, May 30, 2014 at Gateway Nursing Center. She was born September 19, 1939, daughter of the late William Ward Hagaman and Louise Bingham Hagaman. Helen was a retired bookkeeper from Morganton Chair and was a member of Mt. Herman UM Church in Lenoir. She enjoyed her grandchildren, camping and tending her gardens. In addition to her parents, she is preceded in death by her loving husband, Rolon Roy Gragg; two sisters, Doro-thy Greene and Margaret Eireman; one brother, Harold W. Hagaman. She is survived by her daughter, Jean Watts and hus-band Rick of Lenoir; five grandchildren, William and Melissa Watts of Las Vegas, NV, Robert Watts of WV, Julia and husband Billy Wright of Claremont and Jona-than Watts of Hudson; one sister Barbara Perry of Le-noir; nine great-grandchildren; a number of brother and sister-in-laws and nieces and nephews. The family received friends at Mackie Funeral Home on Monday, May 2, 2014, from 1:00 to 2:00 PM . The funeral service followed at 2:00 PM at Mackie Funeral Home Chapel. Entombment was at Woodlawn Memo-rial Gardens in Lenoir. Memorial Contributions may be made to Mt. Angela Teague Ham Granite Falls - Angela Teague Ham, age 49 passed away Monday, June 2, 2014 at Caldwell Hospice and Palliative Care. She was born December 13, 1964 in Catawba County, NC, to Ernest George Teague of Lenoir, NC and Shirley Grant Martinat of Hickory, NC. She is preceded in death by her sister Christina Denise Teague and her brother David Jonathan Teague. Granite Falls High School Alumni Gather For Reunion Entitled “Dining With The Demons”
By Mark Jackson {GFJ}…On May 3, 2014 approximately 225 alumni and former Granite Falls High School students attended a reunion at the Caldwell County Fairgrounds. This reunion was organ-ized by fellow student George Keller and you could probably say that is was a labor of love for him in doing so. Sadly George passed away just days before the reunion. He was in the hospital for a few days and was looking forward to attending. He told Cyndy Adams that “if anything happens, ya‟ll go ahead with this event, because I want everybody to go and have a good time even if I‟m not there.” Cyndy Ad-ams stated “So, we will do as George asked us to do. We will carry on. Let's make George Keller smile, because after all, this whole thing was HIS idea!”
Rhonda Teague stated “We are planning on this being an Annual Event, the first Saturday of May.” Rhonda went on to say “losing George was a great loss to many of us, but we soldiered on with his vi-sion.”
I had the opportunity to correspond with Mr. Keller earlier this year by email and could tell that he was a special person. I would like to thank Cyndy Adams, Rhonda Teague and Nancy Alexander for sharing all of this information with me.
