Come Gather At Our Table� is is my favorite time of year. It's � lled with family, friends and wonderful food, and with � anksgiving only three

weeks away, it's time to start planning the menu and inviting guests. � is month you'll � nd tried and true recipes from my kitchen.

Cider-Basted Turkey With Apple-Wine GravyCider-Basted Turkey:12 lb. whole turkey 1 cup halved seedless grapes2 Granny Smith apples, cut up 2 cups ciderApple-Wine Gravy:Chicken broth 1/4 cup apple wine1/2 cup all-purpose � our Salt, pepper, sage, and thyme to taste 1 cup chicken brothPreheat oven to 325°F. Remove giblets from turkey and reserve for another use. Rinse turkey and pat dry with paper

towels. Stu� body and neck cavities of turkey with apples and grapes. Arrange turkey breast side up in shallow roasting pan. Pour 2 cups cider over turkey. Roast turkey at 325°F for 3½ to 4 hours until thermometer inserted in thickest part of thigh registers 180°F, basting every 30 minutes with pan juices. When turkey is as brown as desired, tent turkey with foil to prevent over browning. Remove turkey to warm platter, reserving pan juices. With foil tent on turkey, let stand 15 minutes before carving. While turkey is standing, strain pan drippings. Skim o� fat. Add enough broth to drippings to measure 2¼ cups. Pour back into roasting pan. In small bowl whisk together � our and 1 cup broth until smooth. Strain into pan drippings. Whisk to blend. Whisk in wine. Season to taste with salt, pepper, sage, and thyme. Set roast-ing pan over 2 burners. Cook gravy over medium high heat, stirring constantly, until thickened and boiling. Strain into serving dish. Carve turkey and serve with gravy. Yield: 8 servings.

Orange-Glazed Brussels Sprouts2 lbs. fresh Brussels sprouts 1/2 tsp. salt4 T. unsalted butter 1/2 cup orange marmalade2 tsp. sugarIn large saucepan, combine sprouts and enough water to cover. Bring to boiling. Reduce heat. Cover and simmer

10 to 12 minutes until tender. Drain in colander. In same saucepan, melt butter over medium heat. Stir in sugar, salt, and marmalade. Continue cooking and stirring until hot and blended. To serve, pour hot sauce over drained sprouts in serving bowl. Mix gently. Yield: 6 to 8 servings.

Potato-And-Turnip Gratin2 eggs 2¼ lbs. turnips1 cup heavy cream 6 T. cornstarch1 cup milk 1 cup minced shallotsSalt and pepper to taste 1/4 cup grated Parmesan cheese1¼ lbs. baking potatoesButter 13x9x2-inch baking dish. Preheat oven to 375°F. In medium bowl, whisk together eggs, cream, milk, and salt

and pepper to taste. Set aside. Peel and coarsely shred potatoes (a food processor works well). Immediately plunge potatoes into bowl of cold water to prevent discoloration. Peel and coarsely shred turnips and plunge into a separate bowl of cold water. Drain potatoes in colander. In same bowl, gradually si� 2 T. cornstarch over potatoes, tossing to mix. Set aside. Drain turnips in colander. In separate bowl, gradually si� 4 T. cornstarch over turnips, tossing to coat. Spread half the turnip mixture in baking dish. Top with all the potato mixture, spreading evenly. Sprinkle shallots over potatoes. Top with remaining turnip mixture in an even layer. Firmly press down vegetable mixture with palms of hands. Pour cream mixture over vegetables. Sprinkle with Parmesan cheese. Bake at 375°F for 45 minutes. Cover tightly with foil. Continue baking 45 to 60 minutes until vegetables in center are tender. To serve: Cut gratin in squares. Yield: 12 servings.

Pumpkin Cheesecake With Bourbon-Cream ToppingPecan Crust:3/4 cup graham cracker crumbs 1/4 cup packed brown sugar1/2 cup � nely chopped pecans 4 T. unsalted butter, melted1/4 cup granulated sugarPumpkin Filling:3 (8 oz.) pkgs. cream cheese, so� ened 1 tsp. vanilla extract1/2 cup granulated sugar 1 T. cornstarch1/2 cup packed brown sugar 1½ tsp. ground cinnamon1½ cups pumpkin puree 1/2 tsp. salt3 eggs 1/2 tsp. ground ginger2 T. heavy cream 1/2 tsp. freshly grated nutmeg1 T. bourbonBourbon-Cream Topping:1½ cups sour cream 1½ T. bourbon3 T. granulated sugarButter 9-inch springform pan. In medium bowl, combine graham cracker crumbs, pecans, 1/4 cup granulated sugar,

1/4 cup brown sugar, and butter. Mix well. Press on bottom and 1/2 inch up sides of springform pan. Refrigerate 1 hour. Preheat oven to 350°F. In large mixer bowl, beat cream cheese, 1/2 cup granulated sugar, and 1/2 cup brown sugar at medium speed of electric mixer until smooth. Beat in pumpkin until blended. Beat in eggs, heavy cream, 1 T. bourbon, and vanilla until smooth. Si� in cornstarch, cinnamon, salt, ginger, and nutmeg. Beat just until mixed. Pour into chilled crust. Place pan on baking sheet. Bake at 350°F for 60 to 70 minutes until skewer inserted in center comes out clean and center is set. Cool in pan set on rack 5 minutes. Toward the end of baking time for cheesecake, in small bowl stir together sour cream, 3 T. granulated sugar, and 1½ T. bourbon until blended. Spread over top of hot cheesecake. Continue baking cheesecake 5 minutes. Cool on rack. Cover and refrigerate overnight before serving. Yield: 10 to 12 servings.

What a bumpy ride last week!

Last week marked the end of Speaker of the House John Boehner's reign as he stepped aside for the new Speaker of the House, Paul Ryan. But not before Boehner "cleaned the barn" for Ryan, including the huge, two-year deal struck between Obama and Congres-sional leaders from both parties. � e agreement — ap-proved by 266 to 167 in the House — will raise the govern-ment's borrowing limit through early 2017, avoiding a default just days away. "A solid piece of legislation," de-clared outgoing Speaker John Boehner.

Ryan — a Republican from Wisconsin and former running mate to Mitt Romney in the 2012 Presidential race — became the 54th Speaker, one of the toughest jobs in America. Addressing both parties, he stated, "We need to wipe the slate clean and start the process over again." He promised to encourage the House of Representatives to work together as well as unify the Republican Party. � at's a tall order considering the divide of establishement versus outsiders in the party,

Paul Ryan, in my opinion, believes in o� ering the Amer-ican people an agenda, some-thing we haven't had in a long time.

On to U.S. boots on the ground in Syria. One year ago Obama said, "� e notion the U.S. should be putting boots on the ground ... would be a huge mistake." Backing up to his promise as far back as 2008

of, "NO new boots on the ground," this announcement is a total change in tactics. Granted, the order is for 50 U.S. troops to go to Syria, but once it starts, where does it stop?

� is is not good news for a war weary country, especially one led by a President that admits he has no strategy! So what has caused the change of heart?

Is it to help stabilize Syria?Is it to help avoid the mis-

takes he made in Iraq when he should have maintained � ve to ten thousand troops in Iraq (which would have had a totally diff erent outcome)?

Is it the beginning of the end of Assad? And with this thought, I can't help but look back at Libya and the decapi-tation of the Libyan govern-ment, Obama's and Hillary's mess. Will history repeat itself? Whatever, you can be assured it will be the next President's mess to clean up.

On to the Bush Watch: Jeb! or Jeb? As Meet the Press pointed out on Sunday morning, there is no doubt Jeb is in trouble. His new slogan is "Jeb Can Fix It!" In my opinion, he needs to start by � xing himself!

He made it clear a few weeks ago he had plenty of cool things to do; maybe it's time for him to go and do them. I think the only good thing about his candidacy for President is it's brought Papa Bush back to life! And that's a good thing.

But on the � ip side, in last Wednesday night's GOP debate, the comment about fantasy football directed to Jeb Bush by a less than fair and balanced moderator was com-pletely out of line. But the entire GOP debate that evening was nothing but

"gotcha" and biased questions instead of questions address-ing the real issues the Ameri-can people care about! Welcome to extreme liberal media.

� e tone of the debate was full of hostility towards the candidates, a real train wreck. � e three moderators were too occupied with making nasty comments and asking ques-tions designed to pit one can-didate against the other, as well as accusing Ben Carson of being involved in a company he had no involvement in, and comparing Donald Trump's campaign to a comic book campaign. � e night was full of innuendos and mean-spir-ited questions and comments.

As far as I'm concerned, CNBC is as bad as media gets. At this time, the debate sched-uled for NBC has been sus-pended, and justi� ably so!

� e winner of the night, in my opinion, was Marco Rubio.

But in closing, say what you will. Each of these candidates did very well considering what they had to deal with, three biased and unprofessional moderators!

And on their behalf, not one of the Republican candi-dates are being investigated by the FBI. � ese three modera-tors can't say that about their girl under investigation right now. None other than their Presidential candidate, Hillary Clinton.

But in closing, I'll take Jeb Bush over Hillary Clinton any day of the week!

Defeating the Devil

Many people believe that the devil is only a myth. But Jesus took the devil seriously. “He who sins is of the devil, for the devil has sinned from the beginning. For this purpose the Son of God was manifested, that He might destroy the works of the devil.” (I John 3:8) Jesus gave the devil’s job descrip-tion, “� e thief does not come except to steal and to kill and to destroy. I have come that they may have life and that they may have it more abun-dantly.” (John 10:10) God’s Word describes the devil as our adver-sary, “Be sober, be vigi-lant; because your ad-versary, the devil, walks about as a roaring lion, seeking whom he may devour. Resist him steadfast in the faith.” (I Peter 5:7-9)

Believers have been given all the spiritual armor and weapons they need to defeat the devil’s attacks. (Ephesians 6:1-18) Use these seven weapons to defeat the devil.

THE SWORD OF THE SPIRIT which is the Word of God is a mighty weapon that will defeat the devil. (Ephe-

sians 6:7) It is sharper than a two-edged sword. � e Holy Spirit quickens and empowers God’s Word. He is called the Spirit of truth. Satan is the father of lies. He did not abide in the truth. Jesus said, “and you shall know the truth and the truth shall make you free.” (John 8:32) God’s Word is the gospel truth. Jesus was tempted by the devil on the mountain for 40 days. For each temptation Jesus used the Sword of the Spirit on the devil — the Word of God. Jesus would quote scripture by saying, “It is written, Satan.” (Matthew 4:1-11) Satan cannot abide the truth of God’s Word.

THE BLOOD OF THE LAMB will enable you to be an overcomer. � e devil is called “the accuser of the brethren.” We are given the most powerful spir itual weapon to overcome him, “They overcame him by the blood of the

Lamb and by the word of their testimony.” (Revelation 12:11) � e blood of Christ is traced from Genesis to Revela-tion. Only the blood of Jesus can make atone-ment for sin and defeat the devil’s claims. Testify to its power in your life.

RESIST THE DEVIL. “Therefore, submit to God. Resist the devil and he will flee from you.” (James 4:7) Peter tells us to resist him steadfast in the faith. (I Peter 5:8-9) What an e� ect, “He will � ee from you.”

REPENT AND RE-NOUNCE ALL THE DEVIL’S WORKS and any past involvement with sin, Satan, or the occult. Involvement in the realm of darkness opens a gate for the devil. Repent and re-nounce it in Jesus’ name. PUT ON THE FULL ARMOR OF GOD. No soldier would go into battle without putting on the full armor and weapons issued to him. God has given be-lievers all they need to defeat the devil. (Ephe-sians 6:1-18)

P R AY I N T H E SPIRIT. “Praying always with all prayer and sup-plication in the Spirit.”

(Ephesians 6:18; Jude 20) Prayer keeps you full of God and the devil cannot penetrate the force � eld of the Holy Spirit in and around you. During Halloween we put up a sign in our front yard that says, “THE ONLY GHOST THAT LIVES IN THIS HOUSE IS THE HOLY GHOST.” Prayer will keep you � lled with the Spirit and Satan cannot touch you.

SPEAK BOLDLY. Paul asked believers to pray for him so that he could boldly speak God’s Word. (Ephesians 6:20) Boldly resist the devil in faith and he will � ee from you.

At the cross Jesus de-feated the devil by His death and resurrection. Recently I came across this post on my Face-book, “Satan was de-feated by Christ at the cross, but he’s seeking you as a consolation prize.” You can defeat the devil by using these mighty weapons of God “For we are more than conquerors through Him who loved us.” (Romans 8:32)Shalom,Cli� SandersEagle Life [email protected]

Veterans Day is coming up on We d n e s d ay, November 11, 2015, and many local businesses and organizations are taking the opportunity to honor veterans by making dona-tions to veteran service organizations. One such local organization is Centralia Elks Lodge 493, who recently received a grant from the Elks

National Foundation (ENF). Centralia Elks members used the money to buy clothing from stores in Centralia, then they dis-tributed the purchases among veterans during the Marion VA Veterans Stand Down Event held at Black Diamond Harley Davidson on Oct. 20. In addition, the Lady Elks donated per-sonal hygiene items for the

veterans. The Elks also purchased gi� certi� cates for sweet treats at Centralia Dairy Queen and gave them to local veterans. Tom and Ruth Kasten of Centralia Dairy Queen got involved as well by o� ering a discount on the coupons.

We salute all our veter-ans and thank you for your service.

Two Southern Illinois University Edwardsville School of Engineering con-struction management competition teams placed in the top three during the Associated Schools of Construction Region III conference held in Downer’s Grove October 14-17. 

“Our students continued their tradition of excellent performance at the region-al and national open con-struction management competitions,” said Chris Gordon, chair of the D e p a r t m e n t o f Construction.  “We see

from these and other indi-cators that our students are highly prepared for success in construction manage-ment, thanks to their hard work and the commitment of our faculty.”

Teams completed their competition materials on Thursday and presented their approach to judges on Friday.  

� e Concrete Solutions team earned second place in the national open com-petition. SIUE competed against teams from across the country, including Eastern Illinois University,

California State University-Sacramento, Bowling Green State University, Milwaukee School of Engineering, Ohio Northern University and California Polytechnic University at San Luis Obispo. 

Six seniors comprised the Concrete Solutions team: Nathan Elting from Macomb, Stephen Schaab and Andrew Goetz from Belleville, Brian Upchurch from Columbia, Phillip Nzegbuna from Chicago and Jacob Eilers from Breese.  Anne Werner, P.E. PhD and assistant professor

of construction, coached the team. 

During the competition, the teams developed a pro-posal that detailed a sched-ule, cost estimate, provided design assistance and ana-lyzed concrete forming systems for a challenging site in a remote region with a tight deadline. 

“Judges were impressed by the team’s strong presen-tation skills and their ability to analyze a complex project and accomplish so much in such a short amount of time,” Werner said.

The Heavy Civil team earned third place in the regional competition. � e team competed against

teams from Bowling Green State University, University of Cincinnati, Eastern Michigan University, Ferris State University, University of Wisconsin-Stout and Michigan Technica l University. 

� e team was comprised of seniors Stuart Bailey from Waterloo, Triston Baltimore from Decatur, Bryce Schuster from Golden and Michael Branscum from Chicago, along with juniors Josh Wilson from Nashville, Ill., and Zach Kelly from Ballwin, Mo. Mark Grinter, assistant professor of con-struction, coached the team. 

The team developed a proposal that included a proposed schedule, site lo-gistics plan, safety plan, price estimate and cost savings recommendations for a challenging highway project for a busy metro-politan area.  

“The team effectively used their management skills, creating a compre-hensive plan of work,” Grinter said.  “Judges com-mented that our team’s ap-proach demonstrated sound judgment and an obvious understanding of the challenges posed by heavy civil construction.”

Home should be your refuge, the place where you feel safest and can breathe easy. But what if the air inside your home is stu� y, stale or just downright dirty? Poor indoor air quality is common in American households, and if your home has bad air, it could be a� ecting your health.

Indoor pollutant levels can be signi� cantly higher than outdoor levels, according to the Environmental Protection Agency. What's more, the EPA notes, because most homes have multiple sources of indoor air pollution, the cu-mulative e� ect of all that pol-lution can lead to health problems. � e problems may show up immediately or take years to emerge, the EPA says, and can include respiratory problems, eye and throat ir-ritation, headaches, dizziness and fatigue.

In observance of National Indoor Air Quality Month this October, here are some common sources of indoor air pollution and what you can do to improve the air inside your home:

To reduce the presence of VOCs in your home, choose low- or no-VOC paints for home improvement projects. If you've recently purchased furniture or had new carpet-ing installed, be sure to use good ventilation — open windows and run ventilation fans to help evacuate VOCs. Choose cleansers made from organic formulations, rather than chemicals.

Dust Dust and dirt in your home

don't just look bad, they can cause respiratory and eye ir-ritation, and make certain conditions - like asthma and allergies - even worse. � e "dust" in your home contains a host of irritants besides simple dirt, including animal dander and hair, dust mites, insect debris, pollen, spores and more. The EPA says keeping your house clean can help reduce biological con-taminants like these.

Vacuuming is one of the most e� ective ways to reduce dust and dirt in your home, but be aware that some vacuums like upright or por-table vacuums may actually increase the amount of dust and allergens in the air. Vacuums can pull dust o� the � oor and exhaust it back into the air. Even uprights with HEPA � lters can't capture and retain all pollutants. A central vacuum system can do a better job of removing con-taminants from your home.

Central vacuums capture debris and other micro-par-ticles and exhaust them di-rectly outside your home, rather than recirculating dust and dirt back into the indoor air. By eliminating 99.97 percent of micro particles, the central vacuum helps improve indoor air quality. � e system can be installed in virtually any style or age home, and is easy to use and maintain.

FumesA number of appliances in

your home can give off noxious fumes like carbon monoxide, from a malfunc-tioning gas log � replace or a kerosene space heater to a faulty central furnace. Depending on the kind of emission, these fumes can cause illness and even be lethal.

To minimize risks, keep all gas appliances in good repair. Have furnaces, heaters and

Military personnel are unsung heroes whose sac-rifices for their country make it possible for hun-dreds of millions of people to enjoy freedoms that many people across the globe do not have. In rec-ognition of those sacri� ces, many people want to show their appreciation to both active and retired service-m e n a n d w o m e n . Fortunately, there are many ways to do just that.

Pitch in at HomeAccording to the United

States Department of Defense, the United States military currently deploys active duty personnel in nearly 150 countries. Many of those troops are sepa-rated from their families for months at a time, and that separation can make things di� cult for their loved ones back home. If a neighbor’s spouse is deployed over-

seas, o� er to help around the house. Whether it’s mowing their lawn, drop-ping their kids o� at school or inviting the whole family over for dinner one night each week, such gestures can go a long way toward easing the burden faced by spouses of deployed mili-tary personnel.

Send Gi� s to Active Personnel

Servicemen and women on active duty do not enjoy many of the luxuries that tend to be taken for granted back home. But men and women who want to show their appreciation can send care packages to active per-sonnel serving overseas. An organization such as Operation Gratitude (op-erationgratitude.com), which to date has sent nearly 1.3 million care packages to active person-nel, sends care packages � lled with snacks, enter-tainment, personal hygiene products and handmade items. � is provides active personnel a taste of home while also letting them know their extraordinary e� orts are appreciated and not forgotten.

Volunteer at a Veterans Hospital

Unfortunately, many servicemen and women return home from their deployments with injuries or health conditions that require long-term care. By volunteering at veteran hospitals, men and women can help veterans overcome their injuries and provide much-needed help to sta� at hospitals that could use a helping hand. Make a Financial Donation

For those who want to support servicemen and women but don’t have

much free time to do so, � nancial donations can go a long way toward improv-ing the quality of life of active and retired military personnel. Many programs work with veterans to improve their quality of life, and such organizations rely heavily on � nancial dona-tions to make their mis-sions a real ity. The Wounded Warrior Project (woundedwarriorproject.org), for example, works to honor and empower ser-vicemen and women who incurred physical or mental injuries or illnesses on or a� er September 11, 2001. � e organization relies on

the generosity of individu-als who want to help wounded military person-nel overcome their injuries and illnesses. Based on audited financial state-ments of the 2014 fiscal ending on September 30, 2014, 80.6 percent of total expenditures went to ser-vices and programs cater-ing to wounded military personnel and their fami-lies, assuring prospective donors that their donations will go toward helping those in need.
