Centuries ago the peach was so rare and costly a commodity in Europe (it had to be im-ported by way of Oriental trade routes) that gardeners across the continent developed techniques to grow it themselves. No such problem existed in America. It's a matter of fact omas Je erson proudly wrote to a friend, "We abound in the luxury of the peach, there being as ne here now as I've ever seen anywhere."
When I did a lot of canning, July was the month for peaches. When this sweet succulent fruit was ripe enough, then it was o to the kitchen. One secret my grandmother gave me — among a million other lessons on life — was when canning peaches you need to put a peach seed or two in each jar. She said the reason was to keep them from turning brown and keep them as fresh as the day they were picked. And like always, she was right! Some of my favor-ite recipes are below.
Peach Shortcake3 cups peeled, thickly sliced peaches 1 T. lemon juice2 T. honey
Shortcake:Sweet Biscuit Dough 1 tsp. granulated sugar (made with nutmeg)
Cream Topping:1 cup heavy cream 1/4 tsp. ground nutmeg2 T. confectioners’ sugar Fresh mint sprigs for garnish
In medium bowl, toss peach slices with honey and lemon juice to coat. Cover and refrig-erate until serving time. Preheat oven to 425°F. On oured surface, roll out biscuit dough 1/2-inch thick. Cut in six 3-inch rounds with a biscuit cutter. Arrange biscuits 1 inch apart on baking sheet. Sprinkle tops with 1 tsp. sugar. Bake at 425°F for 12 minutes until golden brown. Cool on rack. Whip cream with confectioners’ sugar and nutmeg to sti peaks. Cover and refrigerate until serving time. To serve, split biscuits in half horizontally. Place bottom halves of biscuits on 6 dessert plates. Reserve a few peach slices for garnish. Spoon remaining sliced peaches atop biscuit bottoms. Top with a dollop of whipped cream and then the biscuit tops. Garnish with spoonfuls of whipped cream, reserved peaches, and mint sprigs. Yield: 6 servings.
Sweet Biscuit Dough1¾ cups all-purpose our 1/4 tsp. freshly grated nutmeg or2 T. sugar ground cinnamon2 tsp. baking powder 3 T. shortening1/2 tsp. baking soda 2 T. unsalted butter, cut in small pieces1/4 tsp. salt 3/4 cup buttermilk
In large bowl, combine our, sugar, baking powder, baking soda, salt, and spice. Mix well. With a pastry blender or 2 knives, cut in shortening and butter until mixture resembles coarse meal. Stir in buttermilk to form a so dough. Turn out on well- oured surface. Knead gently with ngertips about 10 strokes until smooth. Do not overwork dough or biscuits will be tough. Yield: Six 3-inch or fourteen 2-inch" biscuits.

On June 4, the Girl Scout Troop #8653 gath-ered at the Mt. Vernon's Sportsman's Club to help serve local Veterans. e girls assisted with serving the meal, re lling drinks, and cleaning up the picnic area. The girls learned about the impor-tance of our Veterans. e group discussed how veterans have served in many di erent wars over time, and how they've protected many people. e girls were blessed by meeting a World War II Veteran, Jake Hayes of Mt. Vernon.

On June 19, 2016, 85 y e a r o l d D e a n Troutman set o on a 500 mile fund-raiser walk to raise money
for St. Jude Children's Hospital. Starting in Princeville, IL and ending in Memphis, TN, his approximately 60 day journey will carry him through Sa lem, Dix , Mt . Vernon, Bonnie and Ina.
Last year, Dean Troutman walked 700 miles around Illinois to raise money for Troutman Park which was established in memory of his late wife, Dorothy (Peggy) Troutman. Through the support of the communities and people on his route, Dean successfully raised money to install and complete a play-ground at the park.
Now Dean is another year older, but he wants to continue to help children in need. Mr. Troutman is a gen-erous man with a big heart and he sees this
walk as an extension of the quest to honor h i s w i fe . D e an’s Troutman Trek 2 Memphis goal is to raise money to bene t St. Jude Children’s Research Hospital and help children with cancer.
Hoping to walk about 9 miles a day, Dean Troutman plans to include among his many stops the loca-tion where he and his wife met and were married.
If you'd like to make a donation to St. Jude's Children's Research Hospital, pledges can be made through the website: events.stjude.org/troutman.
Donations can also be mailed (please make checks payable to St. Jude): St. Jude Challenge - Troutman, Attn: Alex Fountain, 501 St. Jude Place, Memphis, TN 38105.

Last Tuesday House Republicans concluded a two year investigation into the 2012 terror attacks in Benghazi with an 800 page report (http://benghazi.house.gov/NewInfo) that blames politically moti-vated bureaucratic delays for failing to prevent or stop the deadly attacks that claimed the lives of Ambassador Chris Stevens, Information O cer Sean Smith, and two CIA op-eratives, Glen Doherty and Tyrone Woods, both former Navy Seals.
As reported in USA Today, this report added new details to the ndings of seven previ-ous congressional inquiries and is expected to be used to question Hillary's leadership in the fall. And so it should be.
Hi l lar y Clinton was Secretary of State when the Benghazi attacks occurred. It was reported that Clinton was planning a trip to Libya later in the year of 2012. is forced diplomats to stay at the poorly protected outpost despite the deteriorating security in the region, which in fact, Hillary Clinton had been advised of numerous times, including by p ers ona l emai l s f rom Ambassador Stevens express-ing concern for his and others' safety, which was virtually ignored.
e recent report also found that despite Barack Obama and Leon Panetta's orders to deploy military support, nothing was sent to Benghzai. e last two Americans were killed at least eight hours a er the attacks began.
In earlier ndings on the Benghazi attacks, it was re-ported that troops were ordered to stand down even a er they prepared to assist these Americans.
At this point we may never know the full truth about what happened. But what I do know is Hillary Clinton, then Secretary of State, dropped the ball and contributed to the lies Susan Rice told on a number of Sunday morning talk shows.
Rice said these attacks were about a protest over a video even though Hillary Clinton and the Obama administration knew this wasn't about any-thing except a planned terror-ist attack on Americans.
It has also been reported in the past that Hillary Clinton emailed her daughter Chelsea as the attacks were going on and told her it was a terrorist attack.
So what does Hillary have to say a er these latest nd-ings?
She said, "No one has thought about or lost more sleep over the lives we lost in Benghazi than me." I nd that statement o ensive. We lost four brave American men who had mothers and fathers, wives, children, grandparents, aunts and uncles, along with friends. How dare Hillary Clinton make such an unfeel-ing statement, especially when her actions said it all; she did nothing to save or protect these young men.
She continued to say, "It's time to move on." I'm sure she wishes to, but for many of us, especially the families of these brave men, they can't move on until they get answers.
Last week I listened to an interview with Patricia Smith, Sean Smith's mother, one of the Americans that lost their lives. Mrs. Smith said, "Hillary is a liar." And it's de nitely not time to move on. She went on to say Hillary "put these people in harm's way and did nothing to protect them," and she wants Hillary to answer for it.
She also stated that at the funeral of her son, Sean, along with other victims she was told by Mrs. Clinton that she would get back to her with answers but she never did. When Mrs. Smith cal led the State Department she was told they couldn't tell her anything because she was not a member of the immediate family. If a mother isn't immediate family, I don't know who is!
Where do I expect this to
go? As I said a couple of weeks ago, nowhere. No matter what the ndings are, or what the FBI says or does, Hillary Clinton won't face charges for the same reason she won't face charges on the misused emails and server: Because the person that can press charges is Attorney General Loretta Lynch, appointed by Barack Obama. Two plus two equals four every time. Corrupt plus corrupt is corruption.
And speaking of Attorney General Loretta Lynch, it just so happens that on Monday of last week she met with Bill Clinton when their planes were just by coincidence at the P h o e n i x S k y Ha r b o r International Airport in Phoenix, Arizona. The Attorney General and former President met aboard a private plane. Really! At this point, even Democrats are having issues with the Attorney General's meeting with the former President while his wife is under federal investigation.
There are laws for us to follow. e Clintons have their own set of laws called no laws. If the above isn't a con ict of interest, I don't know what is! But in Hillary's own words, "What difference does it make?"
Last but certainly not least, last week there was another bloody attack. This one is thought to have been carried out by a Russian, Uzbek and Kyrgyz, and was reportedly planned by ISIS leadership. e latest count of injured and dead at the Istanbul Airport is 42 lost lives and more than 230 hurt. e attacks were carried out by three individuals that blew themselves up.
Until next week. To comment on this or any column

Rare is the athlete who has not had the misfortune of suffering a muscle cramp. Muscle cramps can range from the relatively minor nuisances that can be worked out in a matter of minutes to the more severe cramps that can sideline athletes for an in-determinate period of time.
According to the U.S. National Library of Medi-cine, muscle cramps are o en the byproduct of an overused or injured muscle. When a muscle cramps, that muscle is involun-tarily contracting, and that contraction can be very painful. Because athletes tend to repeat their motions when performing exercises, it’s not uncommon for ath-letes to cramp up from time to time. But even men and women who live sedentary lifestyles can su er from muscle cramps, which the NLM notes could be trig-gered by alcoholism, hypo-thyroidism or kidney failure. Women may su er muscle cramps when they
are pregnant or menstruat-ing.
Certain medications may also cause muscle cramps. Men and women concerned about muscle cramps should read the potential side effects of their medications carefully or speak directly with their physicians before taking any medicines that may cause muscle cramps. e online medical resource WebMD notes that medi-cations such as Lasix, a diuretic used to remove uid from the body, and Crestor, a statin prescribed to adults with high choles-terol, can cause muscle cramps.
While dehydration and electrolyte depletion has long been linked to exer-cise-associated muscle cramps, researchers have been questioning, if not disputing, that link for many years. A 2008 study from South African re-searchers published in the British Journal of Sports Medicine did not support a link between exercise-associated muscle cramps and dehydration or electro-lyte depletion.
Muscle cramps tend to be painful and can occur in the legs, hands, arms, or abdomen or along the rib cage. When cramps occur below the waist, such as in the calf muscle, it can be di cult to stand up.
Treating muscle crampsMuscle cramps require
immediate treatment so su erers can alleviate the pain and/or discomfort cramps can cause. Massag-ing the cramped muscle or applying ice or heat can alleviate the cramp and its associated pain.
Calf or hamstring cramps may be alleviated by putting weight on the a ected leg and bending the knee slightly. Such cramps may also be treated by sitting or lying down with the affected leg straight out and pulling the foot toward the head.
To treat quadriceps cramps (those that occur in the front of the thigh), hold onto to something steady and pull the foot of the a ected leg back toward the buttock.
Preventing future cramps
One of the most e ective ways to prevent future cramps is to listen to your body when it’s sending you signals that it is fatigued. Overused muscles are vul-nerable to cramps, so re-member to include rest in your exercise regimen so muscles have time to recover. If your body feels overtaxed or fatigued before or during a workout, skip the workout or stop it immediately to reduce your risk of cramps or injury.
De ciencies in certain vitamins can directly or indirectly lead to muscle cramps. While the reasons behind the link between thiamine, pantothenic acid and pyridoxine de ciencies and muscle cramps is unknown, speak with your physician about how to include these vitamins in your diet if you have been experiencing muscle cramps.
Cramps can be painful and derail athletes. Learn-ing to prevent cramps can protect athletes and ensure they are not sidelined from their favorite activities.

Many people have de-tected lumps or swelling in their neck, only to visit their physicians and learn they have thyroid cancer. ough thyroid cancer is uncommon, the American Cancer Society estimates that more than 62,000 new cases of thyroid cancer will be diagnosed in the United States in 2015. And while the death rate from thyroid cancer is low compared with most other cancers, it is the most rapidly increas-ing cancer in United States.
Such a reality only em-phasizes the importance of learning about thyroid cancer and if there is any-thing you can do to lower your risk.
What is the thyroid? e thyroid is a butter-
fly-shaped gland in the front part of the neck that is made up of two main types of cells. Follicular cells use iodine from the blood to make the thyroid hormones that help regu-late metabolism. Excessive thyroid hormones is de-
scribed as “hyperthyroid-ism,” which can cause ir-r e g u l a r h e a r t b e a t , difficulty sleeping, ner-vousness, hunger, weight loss, and feelings of being too warm. Hypothyroidism occurs when a person has too little of the thyroid hormone, which can cause fatigue and weight gain and may lead to a person slowing down. e thyroid gland also is made up of C cells that produce the hormone calcitonin, which helps control how the body uses calcium. What is thyroid cancer?
yroid cancer occurs when cells in the thyroid gland grow abnormally and out of control. Papillary carcinoma is the most common form of thyroid cancer, accounting for roughly 8 out of 10 in-stances, according to the ACS. Papillary carcinomas typically grow very slowly, but they o en spread to the lymph nodes in the neck. As common as papillary carcinomas are with regard
to instances of thyroid cancer, they are rarely fatal.
Follicular carcinoma is another form of thyroid cancer. Follicular carcino-ma does not usually spread to the lymph nodes and is more common in countries where people do not get enough iodine in their diets. e prognosis for fol-licular carcinoma is very good, though slightly less so than papillary carcino-ma.
Hürthle cell carcinoma accounts for about 3 percent of thyroid cancers and is a variant follicular carcinoma. Hürthle cell carcinoma is harder to nd and treat than other forms of thyroid cancer.
Additional types of thyroid cancer include medullary thyroid carci-noma, anaplastic carcino-ma, thyroid lymphoma, and thyroid sarcoma.
Risk factors for thyroid cancer
The following are a handful of risk factors that increase a person’s risk of developing thyroid cancer.
• Gender: Th e ACS notes that women are at greater risk of developing thyroid cancer than men. yroid cancer occurs about three times more o en in women than in men.
• Age: Th yroid cancer does not discriminate based on age, but women are most o en diagnosed in their 40s and 50s while men tend to be diagnosed in their 60s and 70s.
• Diet: Areas of the world where diets are low in iodine have more cases of follicular carcinoma than areas, such as the United States, where iodine, which is typically added to table salt and other foods, is more likely to be a regular part of a person’s diet.
• Radiation: According to the ACS, exposure to radiation is a proven risk factor for thyroid cancer. Head or neck radiation treatments during child-hood increase a person’s risk, though imaging tests such as X-rays and CT scans use low doses of ra-diation, making their con-nection to thyroid cancer risk unclear.

Faith is the Victory
What a powerful presence of God lled the chapel as I minis-tered at the county jail. As I gave an opportu-nity for the inmates to share what God was doing in their life, a young man with tattoos on his arms and a radi-ance about him, raised his hand and asked, “Do you believe that God speaks in dreams? Last night I had a dream and saw the word FAITH in large letters suspended on the wall. Suddenly it exploded and I was knocked o my bed and found myself kneeling, crying out to Jesus to come into my life, forgive me and be my Savior.” What was the catalyst that powerfully changed that young man’s life? Faith in Christ.
We are given the secret to victory in our life. “For whatsoever is born of God overcomes the world: and this is the victory that overcomes the world, even our faith. Who is he that overcomes the world, but he that believes that Jesus is the Son of God.” (I John 5:4-5)
George Washington acknowledged his source of victory, “It is impossible to rightly govern the world, without God and the Bible.” Whatever seem-ingly impossible situa-tions you may be facing, consider the promi-nence and power of faith throughout the Bible that can bring you victory.
THE PRINCIPLE OF FAITH. From Genesis to Revelation we see the principle or law of faith in operation. “But the just shall live by faith.” (Habakkuk 2:4) Faith is the catalyst for the power of God. (Hebrews 4:2)
THE PLEASURE OF FAITH. God takes note of faith. Faith impresses God and brings him pleasure. “But without faith it is impossible to please him . . . believe he is a rewarder of them that diligently seek him.”
(Hebrews 11:6) Jesus commended the centu-rion’s faith. (Matthew 8:10)
THE PROPORTION OF FAITH. God’s bless-ings are given according to your faith. (Matthew 9:22, 29) But the good news is that even faith the size of a mustard seed can move a moun-tain. (Mark 17:20)
THE POWER OF FAITH. Faith gives victory to overcome the world. (I John 5:4-5) Peter walked on water by faith in the word of the Lord. Have you been around someone who said, “I’m going under!” But if God said I can, then all that’s le is to do it! God wants us to have faith in him and ourselves. I may not be able to do it, but God can. God and I can do anything. As a new song says, “Lord, make us courageous.” (Luke 7:50; Acts 3:16; Ephesians 6:16)
THE PLANTING OF FAITH. e seed of faith must be planted in the right soil. The soil of Christ and his living Word. (I Timothy 3:13; Romans 4:19-25; 10:17)
THE PRAYER OF FAITH. e prayer of
faith will heal the sick. (James 5:15; Mark 16:17-18) Praying in the Spirit will build your faith up. (Jude 20) Cary Grant said, “If you don’t have faith, pray anyway. If you don’t understand or believe the words . . . pray anyway. Prayer can start faith, particularly if you pray aloud. And even the most imperfect prayer is an attempt to reach God.” Pray in faith. Faith is the victory.
THE PROPITIA-TION THROUGH FAITH. “Whom God hath set forth to be a propitiation through faith in his blood, to declare his righteous-ness for the remission of sins.” (Romans 3:25) Only as we put faith in the finished work of Christ on the cross will there be victory that overcomes the world.
e young man at the county jail was given a message of faith through a dream. Here is your message from God’s Word, “And this is the victory that overcomes the world, even our faith.” (I John 5:4-5)Shalom,Cli SandersEagle Life [email protected]
