Welcome To Vinum

THERE IS NO GREAT MEAL WITHOUT GREAT WINE

History tells us wine was first made more than five thousand years before the

birth of Christ. These early wines, emanating from central Russia, were made

from grapes fermented in earthen ware buried in the ground.

Mother Earth provided the fruit and in simple fashion, crafted the wine. It‟s been

said that wine is the temperate, civilized, sacred, romantic mealtime beverage.

We agree.

Here at Huvafenfushi‟s - Vinum – The Underground Wine Cellar

Wine is much more than a beverage. We regard wine as an essential

accompaniment to fine dining. The Epicurean marriage of wine and food has

become an artistic expression and when affected properly, allows you, our guest,

the opportunity to fully experience the pleasure of both food and drink. As you

gently swirl the wine in your glass and sip it, note how the fragrance and taste

changes with each course of your dinner. Experience the bouquet as the

temperature of the wine changes and as air comes in contact with the wine.

Always remember, no two bottles of wine are alike …

Each bottle is an experience in itself.

And finally, we hope you‟ll enjoy the number and diversity of wines available in

Vinum. We‟re here to help you make a selection. Always remember, wine is like art

– what appeals to one person may not to another. Venture out and find the wines

you like and revisit them from time to time. Don‟t be afraid to challenge your

tastes and preconceived notions; seek new experiences.

Be assured that no wine offered in Vinum is a bad wine.

Bon appétit!

Let the Journey Begin

You‟re Sommelier

The Collection

Considered the pinnacle of Burgundy, Domaine de la Romanée-Conti produces some of the world‟s most revered

wines from its tiny vineyards in Vosne-Romanée. Two of the Domaine‟s seven Grand Cru vineyards - La Romanée-

Conti and La Tâche - are monopoles (appellations entirely owned by the Domaine) and unarguably the greatest

vineyards in Burgundy, yielding sublime wines that are among the most highly-sought, seductive and rarest in the

world.

Château Margaux 1955 was a huge success, it combined most of the parameters that are necessary to make a

great vintage; in particular, a hot, dry August and excellent conditions during the harvest.

1955 Château Margaux, 1er Cru Classé, Margaux, France 3752

A milestone considered to be one of the greatest vintages of the post-war period.

Château Gruaud-Larose is a winery in the Saint-Julien appellation of the Bordeaux region of France. The wine

Official Classification of 1855.

1961 Château Gruaud-Larose, Cordiér, Saint-Julien, France 953

Château d'Yquem is considered by many to be Bordeaux‟s single greatest wine and it is the only wine in France to

hold the Premier Cru Supérieur (Great First Growth) designation. The uncompromising pursuit of quality is what

sets this sweet white wine apart – a standard meticulously maintained throughout the estate‟s history.

1975 Château D‟yquem, 1er Cru Classé Supérieur, Sauternes, Bordeaux, France 1893

Grange is arguably Australia's most famous wine and is officially listed as a Heritage Icon of South Australia.

Grange boasts an unbroken line of vintages from the experimental 1951 and clearly demonstrates the synergy

between Shiraz and the soils and climates of South Australia.

1971 Shiraz, Penfolds, Grange Hermitage, Bin 95, South Australia 2600

1967 Penfolds, Bin- 868, “Special Status”, Sauternes, South Australia 1030

Port is one of the great classic European wines and its history is a long and fascinating one. Port is arguably the

greatest of all fortified wines and its paramount expression, Vintage Port, ranks alongside the finest produce of

Bordeaux or Burgundy as one of the great iconic wines of the world.

CHAMPAGNE

"I drink it when I am happy and when I am sad. Sometimes, I drink it when I am alone.

When I have company, I consider it obligatory. I trifle with it if I am not hungry and drink it

when I am. Otherwise, I never touch it - unless I am thirsty."

WHEN ONE BOTTLE IS NOT ENOUGH

The earliest recorded use of biblical names for big bottles comes from 1725

where winemakers in bordeaux were using the names. It's presumed they selected Jeroboam,

the biblical founder of Israel, who ruled from 931-910 BC because he is referred to as "a man of

great worth," as were the larger size bottles.

Mnemonic for these big bottle sizes is: My Judy Really Makes Splendid Belching Noises

DESSERT WINES

Historically, no wines have been both loved and maligned more than dessert wines and fortified

wines. In one culture, they are treasured by kings and queens; in others, they are the stuff of

skid row. Some were discovered through accidents of nature, others through human oversight.

In any case, many of them deserve a place among the world's greatest wines.
