1 Tbsp. butter3 eggs 1/2 cup milk

Preheat oven to 425ºF. Melt butter in a 9" pie pan in oven. Keep pan in oven to stay hot. Blend eggs and milk together in a blender; add flour to egg mixture and blend more.Pour into buttered and preheated pie pan. Bake 18 minutes. Pancake will rise and puff. Serve hot with your favorite topping.

Rosemary Skewered Shrimpi n g r E d i E n t s

2 lemons2 tsps. dried oregano3 Tbsps. olive oil24 lg. shrimp, peeled and deveined12 grape tomatoes

Grate the lemon peel into a large mixing bowl and set lemons aside. Mix oregano and oil into the lemon zest. Add the shrimp and toss to coat. Cover and refrigerate for 1 – 2 hours. Skewer 3 shrimp, 2 chunks of bell pepper and 1 tomato alternately onto each rosemary sprig. Preheat grill to medium-high heat. Grill for 2 minutes on each side. Squeeze juice from 1 lemon over the shimp. Transfer to a platter garnished with palm leaves and an orchid for a tropical treat. Serves 4.

Mellow Mushroom Burgersi n g r E d i E n t s

2 pounds ground chuck1 pound sweet Italian sausageSalt and freshly ground black

pepper, to taste2 cups sliced crimini mushrooms2 cups sliced shitake mushrooms

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. Combine the chuck, sausage, salt, and pepper and shape into 6 patties. Sauté mushrooms in olive oil for about 5 minutes. Add thyme and shallots and sauté for 5 minutes more. Season with salt and pepper. When grill is ready, brush the rack with vegetable oil. Place patties on the rack, cover, andcook, turning once, until done to your preference (at least 160º F). Spread softened goat cheese on each bun bottom. Add a burger patty. Top with warm mushroom mixture and bun top. Serves 6. This burger is hip with a spicy and fruit-forward Zinfandel.Recipe courtesy www.buildabetterburger.com
