Asanaturalregion,itconsistsof two micro regions:low (coastal and Adriatic) and high (upper and moun-tainous) Herzegovina. The high Her-zegovina comprehends the upper and middleNeretvabasin,alargepart of the Dinaric region, mount Vele, Volujak, Prenj, vrsnica and Crvanj, and the well-known Nevesinjsko and Gataakokarstplains.Thelowor Adriatic Herzegovina spreads around the lower course of the Neretva Riv-erandintheBregavaandTrebiat river basins. It comprehends the big Popovoplain,Mostarskoplainand valley,andTrebinjskoplain.With itssub-MediterraneanandMediter-ranean climate, Herzegovina is a re-gion where Mediterranean fruit and vegetablesthrive.Manythinkofit astheCaliforniaofBosniaand Herzegovina. Grape vine, fg, peach, tangerine,apple,pomegranate,ol-iveandothervarieties,aswellas medicinal herbs such as sage, heath-er, immortelle, etc., grow here. Its exactly because of this mild climate that Herzegovina is the biggest and singlegrapesandwineproducerin BosniaandHerzegovina.Twoau-tochthonousvarieties,ilavkaand Blatina, have long ago acclimated to the region and yield crops and qual-ity like nowhere else. Herzegovinaisthelandofsunand stone,anditsgladesandvalesare covered by low and high vegetation, such as brambles, oak tree, ash, com-mon maple, juniper, and pine trees. Thisenvironmentprovidestoeach passer by unforgettable views pleas-antfortheeyeandthesoul.Asa historical region, Herzegovina offers alotofhistoricalsitessuchasthe Old Town in Mostar, the Old Town of Poitelj, Tekija in Blagaj, Mogorjelo, Radimlja,thetowerofLjubuki, etc. In the museums of Herzegovina several fndings and fossils from an-cienthistoryhavebeenpreserved. Dvije autohtone sorte, ilavka i Blatina,odavno su se ovd-je udomaile i daju urod i kvalitetu kao nigdje drugdje.Hercegovinajezemljasuncaika-mena, a njezine proplanke i udoline prekrivajuniskoivisokoraslinje kao to su draa, hrast, jasen, klen, smreka i borovina. Towardstheendofthe19thcen-tury, with the frst wine exports to the Western Europe, wine business becomes a signifcant source of in-come in Herzegovina, and this trend continueswithmarketconquering all over the world.WinebusinessinHerzegovinahas haditsupsanddowns,butithas never stopped being the main agri-cultural branch, and one could say, lifestyle of the local people. Naime srednjovjekovna Bosna je nekada bila, i bez kasnije pripojenogjunogdjela(Huma), prepoznatljivavinogradarskovi-narska zemlja. U srednjem vijeku jegotovosvakavelikakaobitelj uBosniimalasvojevinograde.O ovomejasnogovoreprvidetaljni katastarski popisi koji datiraju iz XV. i XVI. stoljea. -et-st arg-a eta-e- t-r-DolaskomTuraka,iprocesomis-lamizacijeBosne,ovaproizvodnja seuXVI.,XVII.,iXVIII.stoljeu postupno gasi, i na kraju nestaje. UzrocinestankavinovelozeuBos-nisuviestruki,anajzaslunijisu estiratovi,jervinovalozakao kultura zahtjeva visok stupanj ljud-skog angamana.

Proizvodnja vina danas je ograniena na slivna podruja rijeka Neretve i Trebinjice,odnosnohercegovaki vinogradarskirajonsmostarskim, litikim i jablanikim vinogorjem.Vinarstvokaogospodarskagrana postajeznaajanizvorprihodau HercegovinikrajemIXX.stoljea, kadasebiljeeiprviizvozivina premazapadnojEuropi,aova-kavtrendsenastavljaosvajanjem trita irom svijeta. Thebeautifulcrystalclearyellow-greenhue,specifcaroma,harmo-niousproportionofalcoholand acidity,andarichextract,distin-guish ilavka from all other wines. Itsastrongwinewith12to14% of alcohol, 5 to 6 g/l of total acid-ity, with a total extract of 20 to 27 g/l.Itgainsitsgenuineplenitude andfeaturesthelongeritisaging in the bottle. TheinhabitantsofHerzegovina drink ilavka with boiled or grilled lamb,eelandotherfresh-water andsea fsh, as well as with cheese frombellows,andham.Itisbest served refrigerated at 10 to 12 C.nious taste. As a southern wine it has a satisfying concentration of acid. It is good to let it age for several years in wood-en barrels, even more, the quality is the highest, they say, with up to 5 years of aging. It is recommended to drink Blatina with strong meals, meatfromgame,especiallyroast-meat, fsh stew, and beef ham. It is drunk slowly, clear on 18 to 20 C, fromnicelyshapedglasses,andin a rural ambience from the wooden jug. Ona ima funk-cionalnoenskicvijet(autosteril-an) zbog ega se u nasadima uvijek uzgajasdrugimkultivarima(sor-tama) kao to su Allicante bouschet (Kambua),) Merloti Trnjak koji su ujedno i opraivai Blatine. Posluivati je obvezno rashlaenunatemperaturi10-12 C.Kaojunovinoposjeduje zadovoljavajuu koncentraciju kise-lina. Za vino je dobro da odlei koju godinuudrvenimbavama,ak tovie, kakvoa mu raste do pet go-dina starosti. Out of this, 5691 hectares or 98,4%ofvineyardsbelongedtotheHerzegovinawine-growingregion,whilethenorthBosniaregionhad90 hectares or 1.6%.
