Chairmans letter
2016 is a special year for me, this year is my graduationI have now dedicated my life exclusively to the wine sector for 18 years. I am also celebrating the 10th anniversary of the founding of Wine Up Consulting. It has been a long road to get here, and, with a little luck and a lot of hard work I am achieving what I set out to do. My life is wine, and just like a good wine, I understand that it takes time to achieve great and good things. Eight years ago the first online wine tasting site www.ecatas.com was created. It was programmed and designed bearing in mind that information on it would later be used to create a wine guide, the Wine Up wine guide! The data system I use allows me, if bodegas continue to trust my criteria, after 5 years to use statistics to analyse, for example, the development of denominations of origin or how they are working with distinct grape varieties. It also, objectively, allows me to study if climate change is really affecting alcohol levels, or if wines are maturing more quickly or more slowly. It is a real privilege, and one that Im happy to share. Speaking about the guide now, this is the third annual edition of the Wine Up! wine and distillates guide. A book that is a whole years work for me and those that accompany me on tasting sessions. It is very important for me to stress that what is being analysed is the result of the work, investment and effort of many people for many years and for these reasons I try to be as respectful as possible in my comments and with the wines themselves. Those that do not meet my standards or fail to attain a minimum rating of 85 points are not published. I understand that it benefits nobody nor is in their interest. It is not about making a guide with more wines (that is easily done), its about making a guide of the best wines.

I always emphasise and like to stress that tastings are done blind, there is no better way to be impartial and respectful. All wines, irrespective of where they come from, deserve the same opportunity. It is also true that, once the labels are revealed, there are not as many surprises as one may think. The usual regions have a very high average quality whilst other regions that have recently woken up to the idea of quality wines are a bit hit and miss. Of course, speaking of denomination of origin we are referring to a group of wine producers that work under the same rules, but they dont stop being independent wine makers with different interests and markets. Referring to the tastings, please do not think that it is fun, its work, and hard work at that. It is not just drinking wine, it is analysing it, studying it using both hands. The right hand moving the glass and the left (Im left handed) writing all that I find. 100 wines in 12 hours is a normal days work, stopping for occasional breaks and food. The guide publishes 1039 wines and distillates from 250 bodegas, although many more are tasted, but as I mentioned before I think there are wines that would be no benefit to anyone to publish (for their low rating). In this edition, I am finally publishing a guide of single-variety wines. It was my intention to do this from the very beginning, I had the information, but as I have said, I prefer to take it step by step. In the 100x100 single-variety section there are almost 600 wines and 56 different varieties. Can you guess which is the most abundant? Yes, of course, the Queen of Spain is none other than the TEMPRANILLO. With respect to the total number of wines tasted in the guide, of the 1039 wines, the average rating is 90.47 points and 12.68 is the average price. For sure there will be those that say that the average score is high, lucky for me as a taster and those who accompanied me, but, as a whole wineries only send their most representative wines, those of the best quality, something we
welcome as, from my point of view, the best guide is not one that has the most wines, but that which has the best price/quality wines. I doubt that anyone buys a wine guide to choose a table wine in a supermarket, although some supermarkets sell making reference to a certain wine guide. I have tasted wines from 60 denominations and IGPs and also included some international wines and distillates. I wont (at least not now) make a distinction between the denominations of origin and their ratings, but it would be very interesting. The guide is also about wineries and denominations of origin, and there is a directory of more than 3,200 bodegas and over 120 quality labels. About the wines tasted: 71 sparkling, 258 whites and 570 reds. The rest are ros, sweet, fortified wines and distillates. There has been a significant increase in fortified wines, showing that things are finally on the move in the exciting sherries from Jerez (and Montilla). Of the white wines tasted we have differentiated between young wines, barrel-fermented wines and crianzas. It is interesting that the average score of the young whites is 89.63 points with an average sale price of 6.72 whilst those that are aged in oak cost an average 15.75 and have achieved an average rating of 91.51 points. As regards the 71 sparkling wines tasted, the average price is 13.49 and the average rating 90.62 points. Spain makes great sparkling wines, they are constantly improving. Of all red wines tasted, the average price is 13.59 euros and the average rating is 90.44 points.
I divided the reds into three large groups under the following criteria:
2014 vintage wines tasted without ageing or young reds: average
89.19 points and 6.13.
2012-2013 vintage wines tasted: average 90.09 points and 10.62.
2011 and earlier vintages tasted: average 91.20 points and 18.80.
We could assess this data, but we believe it is so obvious that it would be easy
to draw conclusions, what is clear is that the price is not due to marketing
issues (or at least not all), behind it there a lot of work and quality, which
without doubt is what the consumer ends up paying for (and very happily).

PRESENTATION
This DIGITAL WINE GUIDE is now used in over 100,000 devices. In this seventh
edition, and third annual edition, I continue to present wines, bodegas and
denominations of origin to anyone who is interested in wine.
Nowadays we live in a digital era; smartphones, tablets replacing PCs, e-books,
digital handbooks, PDAs, The wine industry can be considered modern but
there is a part of it clung to the past that refuses to evolve, not understanding
that evolution can BRING IT CLOSER TO THE FINAL CONSUMER through
distributors, importers, stores, etc. all around the world and this does not
imply any changes in the work philosophy at the vineyard or at the winery.
Social Networks have had a meteoric impact that has changed our lives, and
most importantly, the way we interact with our fellows, and why not, with
those companies and brands that we follow and / or consume.
In 1998 I started working in the wine industry and over the years I have learned
about different aspects of this sector as the administrative, technical and
commercial business processes and during this last period I have worked in the
consultancy and advising field via my own company Wine Up Consulting, in the
communication field and I have also tasted thousands of wines. Many of these
wines are published in my most ambitious digital project: The first online wine
tasting site, www.ecatas.com, is 8 years old this year. The site has been
completely redesigned with the aim of making it much more user friendly.
This guide is born precisely from the experience of tasting; participating in
tasting sessions, as a jury at international competitions and of course, tasting
for the website www.ecatas.com. All wines and data published in the guide are

taken from this website and thanks to the project and the initial programming
we obtain the data collection as well as the modulation according to what is
required. After that, these data go through an adaptation process to the
format and the context. We hope that the final result meets your expectations.
The purpose of this guide is clear and defined, that is, to bring the wine closer
to the consumers (whether final or intermediary) and help them to know the
wine and winery information first-hand and especially the tasting impressions
along its three stages: Visual phase, Olfactory phase and In mouth (Aftertaste)
phase.
When tasting this way, decimals may appear. The scoring process is similar to
that carried out in competitions. And since the system provides us
decimalswhy should we omit them? I have always maintained that a wine
with a punctuation of 91.10 is not the same as one with 91.90 points. It is also
important to know the punctuation a wine gets on each of the different tasting
phases. The punctuation in the visual phase is important because it provides a
lot of information, in the olfactory phase we discover what the wine offers and
prepares us for the next and last step. Finally, on the palate is where the wine
finally shows itself and meets the expectations.or not.

The tasting sessions have taken place at the Wine Up Club Tasting Room in
Socuellamos, Ciudad Real. They were carried out by teams of 3 to 5 tasters.
Every wine was tasted blindly since it is the best way to do it avoiding the
temptation to valuate friends better. It is also important to explain that no
more than 100 wines were ever
tasted the same day, breaks were
taken every hour and the light
conditions, room temperature and
the wine temperature were
optimal.

Person of the year: Antonio Flores
At the time of creating the nomination for "Person of the Year" more than
three years ago, before launching the first edition, it was clear to me that it
should be a person with a long history who had contributed their experience
and expertise to the sector, beyond the business he/she worked for.
Furthermore, it should be alternated according to the different roles that these
people play in the sector.
The first year it was awarded to a great SOMMELIER: Charlie Arturaola, it
would be strange if you havent heard of him, but if you havent you only have
to do a google search to see what a great personality Charlie is.
The second year it had to be someone who had contributed their experience
to the sector from another field, in this case COMMUNICATION: Salvador
Manjn, one of the most important (if not the most important) wine
journalists in Spain, director of La Semana Vitivincola.
The decision for this third edition was taken some time ago. It would be a
winery man, and who better than a wine maker, who better than ANTONIO
FLORES PEDREGOSA. He is the 2016 Wine Up! guide to wines and distillates
personality of the year, on merit.
Person of the year: Antonio Flores
I'll try to list some of those merits, but Antonio was predestined and part of
Gonzalez Byass ever since his birth in the very same bodega in Jerez, just above
where the "Tio Pepe" foundation stone lies. The bodega where his father was
Production Manager and who retired with over 50 years service.
Without doubt Antonio learned to
love wine from him, and particularly
JEREZ. I can picture Antonios
childhood, between the barrels,
treading the chalky ground of the
bodegas or under the shadow of the
century old vines that shade the
streets. He probably contributed his
knowledge to fellow colleagues whilst studying oenology at the Rovira i Virgili
University in Tarragona and missing his native Jerez.
He joined the technical team at Gonzlez Byass in 1980 and is currently the
oenologist and master blender specialising in Jerez wines.
He has directed numerous national and international
tastings, Madrid Fusion, Food, London Wine Fair,
Vinexpo, Vinoble, Institute of Masters of Wine, Spanish
Federation of Winemakers, etc. In 2009 he received the
prestigious "Len Evans award from the International
Wine Challenge, which has rewarded the work of
Antonio Flores for five years in a row.
This is the "public" part of his biography that I want to supplement it with what
I know about him and led me to choose him, what I would really like is to be
able to extend it to the entire Gonzlez Byass team.
Person of the year: Antonio Flores
Apart from having a great nose and being extremely adept with the sampling
rod, he is a born communicator. Antonio doesnt taste wine, he recites it. I
could spend an afternoon (actually I have spent a day and a half) listening to
him and tasting the wines of Gonzlez Byass.
I was fortunate enough to participate last
September at the Sherry Master, a true
Gonzalez Byass experience, a real
enogastronomic treat not to be missed, only
there will you understand what a 200 or 180,
120 year wine is ... pure history locked in a
barrel and you can drink it, part of this liquid
history, that now forms part of my body.
Antonio is very friendly, affable, his voice envelops you, he has a voice that is
difficult to forget, even more difficult to forget are his descriptions of the
wines, of his wines.
He is one of the principal
proponents of the sherry
Revolution, the resurgence
of Jerez both within Spain
and internationally. At this
point I confess to being a
devotee of sherry,
passionate about it and a
staunch defender of it.
Firstly because I like Jerez in
whatsoever shape or form: biological or via oxidised ageing, that is to say: fino,
amontillado, oloroso, palo cortado, creamgive me a minute and Ill tell you
which I would choose. Then there is another reason, and those are the links
between the two regions of La Mancha and Jerez.

Returning to Antonio, and more specifically to his name flores, I cant help
but think about the flor, the velo de flor, that is to fino what the grape is to
wine.
In nominating Antonio, implicit recognition is given to Jerez, and above all, to
the figure of Manuel Maria Gonzalez who founded Gonzlez Byass 180 years
ago. Also of course to his descendants and the whole team of the famous
bottle with the Cordovan hat.

The conviction to follow a dream
How Bodegas Hispano+Suizas began.
Three men, soul brothers, share the same dream having spent half their
lives in the world of wine; make vines they wanted to make, starting with
vine through to the final label. Between the whims of a strat up winery by
someone new to the sector or a wine made to meet market trends there is
a third way Marc Grin, Pablo Ossorio and Rafael Navarro wanted to develop
a very personal project and gave it the name Bodegas Hispano+Suizas after

Their aim was to make high quality wines; accessible to the growing

For over a decade, they decided to name their wine Eresma; a homeland: Olmedo and a surname: DO Rueda. The dream became reality. Eresma-La Soterraa is located in the town of Olmedo in Valladolid province, and both, their vineyard and wines remain enrolled in the DO Rueda, one of the producing areas most prestigious white wines of Spain. The key to the quality of our wine is in the vineyard, which reaches 250 hectares spread over the terms Valladolid Serrada and La Seca, mainly. We cultivate there our Verdejo, Viura and Sauvignon Blanc varieties, grapes variety which we elaborate our full range of varietal wines in our own cellar. Eresma-La Soterraa winery produces young wines Eresma Verdejo and Eresma Sauvignon; a white fermented in barrel and another semisweet white, also under the name Eresma and in addition the brand V & R as a young verdejo.
