The best things in life are often passed down from one generation to the next and Greek recipes are living proof of that! Greek cooking traditions date back thousands of years and Greeks today still eat some of the same dishes their ancestors used to eat.
PIES (pita in Greek), were made in antiquity. The ancient Greeks, who were the first to write down food recipes, inform us that pies were served during symposiums. There are literally hundreds of different types of pies. Some are rectangular, some are spiral, some are shaped like sticks, and some are folded into small triangles. Some pies are savoury, some are sweet. Every Greek region has some form of pie made from local cheese combined, possibly, with homegrown greens.

Filo pastry is tissue-thin sheets of dough which are used to make many popular Greek dishes such as baklava and spanakopita. Filo pastry sheets are usually brushed with melted butter or oil and then layered together. During baking the layers become crispy and flaky, giving your dishes the perfect crunchy texture!
Baking instructions:Remove the filo pastry from the freezer, keep it in its wrapping, and allow it to defrost by either leaving it in the fridge for one night or at room temperature for at least 2 hours until it is properly defrosted.Prepare the filling of your choice, and once it’s ready, unroll the filo pastry and spread half of the sheets out on a lightly oiled baking pan.Pour the filling over the filo pastry and cover with the remaining sheets. If you want, you can brush the top with egg. Separate the pie into pieces by scoring the top and bake in a preheated convection oven at 185ºC (365ºF) for approximately 40 minutes until golden brown.

Use puff pastry in both sweet and savory recipes, creating authentic homemade treats whenever inspiration strikes!

We made this buttery, eggy cheese pie that is a beloved specialty in the mountain villages of Epirus, in northwestern Greece, in order to spread the unknown traditional original recipes all over the world. This pie is similarly beautiful in its simplicity and it is perfect for a picnic or a snack for a movie night.
