In our 2nd issue of Chicazine we bring you news
of an airport opening , another still on the draw-
ing board and what’s happening with flights to Bali
airport during the APEC conference. With Heads of
States arriving from around the world there will most
certainly be disruptions not only at the airport but
also on the roads.
August 17th see’s Indonesia celebrating Inde-
pendence Day. Nationwide one can witness the
real sense of patriotism in this country with red and
white flags flying high everywhere you look.
Restaurants in this issue we have focused on a
couple of established restaurants that deserve a
mention for their sensational food and consistently
good service.
We also bring you news of two superb but very
different phinisi boats offering the utmost in luxury
cruising……a dream comes true!

Vivi was out and about this month in India to participate in ‘Indonesia Sales Mission to India 2013’ organised by the Indonesian Ministry and held in three cit-ies: Chennai, Pune and Mumbai. It was an annual program of seller and buyer meetings in each city introducing Indo-nesia to the new market as well as up-dating the existing market. Bali is fast becoming India’s top destination for honeymooners and Asia Wold Indone-sia eagerly supports this awareness cam-paign. Vivi also ventured to Bangka in mid July, which she tells us is a real gem with beautiful white sandy beaches just waiting to be discovered.

Upon opening, the new airport will take over from Medan’s Polonia Interna-tional Airport as the new gateway for the North Sumatra region. It will be-come the second larg-est and second busiest airport in Indonesia, after Jakarta’s Soekharno-Hat-ta International Airport, with room to grow even bigger in future.
Kuala Namu Airport has a 3,750-metre-long run-way capable of
handling all wide-bodied aircraft, including the Air-bus A380. The airport’s 6.5-hectare terminal is built to serve nine mil-lion passengers in its first phase, rising to 16m in its second phase and po-tentially even more in fu-ture decades.
And while it lies further outside Medan than Po-lonia Airport, it will be connected to the city by an airport rail line, which will be able to carry 172

The government has announced it will close Ngurah Rai International Airport in Bali to commercial flights for a few hours when the island hosts the Asia Pacific Economic Cooperation (APEC) Summit in October.
Transportation Ministry spokesman Bam-bang S. Ervan said the airport would be closed from 10 a.m. to 4 p.m. on Oct. 5-6 and Oct. 8-9 to make way for state VIPs’ planes.
Furthermore, effective 30 July 2013, for domestic departures passengers will walk through the International Terminal Building to reach the domestic depar-tures area. For your comfort, please ar-rive earlier at the airport dur¬ing these dates.
The APEC Summit in Bali will be at¬tended by representatives from 23 countries. Established in 1989, the orga¬nization represents 40 percent of the world’s population, 54.2 per-cent of the world’s Gross Domestic Product (GDP) and 43.7 percent of global trade. The National Police are set to prepare a total of 92 patrol cars, assuming that each delegation will require four cars.

Industry UpdateBLUE wATER EXPRESS
ABlue Water Express have announced the
arrival of their latest boat, BlueWater Express
V, running from Serangan Island, Bali to the
Gili Islands and Lombok. At over 16 meters
in length, and powered by five 250hp out-
boards, the new vessel has a licensed capac-
ity of 55 seated, making it the largest boat
in the BlueWater fleet. Top speed is over 40
knots, cruising comfortably and efficiently at
around 30 knots. The spacious design and ad-
ditional power translate into increased safety,
comfort and reliability for passengers.
The company now has three vessels available
for the Serangan Island, Bali to Gili route, al-
though only runs two at any time. This allows
for a back up boat readily available if one of
the others needs maintenance.
The larger capacity BlueWater Express V has
been launched just in time for the high sea-
son, and the surge in demand. The new ves-
sel is a relatively lightweight construction, and
despite having more power and significantly
higher passenger capacity than the other
BlueWater boats, is very fast and relatively fuel
efficient.
Considering the recent fuel price increases,
this allows BlueWater Express to maintain
competitive pricing throughout the high sea-
son and will not be increasing rates as a result
of the fuel price increase.
BlueWater Express the pioneer of the fast
boat industry, has been in operation since
2006. They are also the only company to run
daily services from both the main ports in Bali:
Serangan Island in the South, and Padang Bai
in the East.

02. ALILA PURnAMA Alila Hotels and Resorts has launched its own
luxury wooden Phinisi sailing boat, the Alila
Purnama, which will take guests on voyages
of discovery throughout the stunning and un-
discovered waters and islands of Indonesia.
Alila Purnama translated as “The Full Moon”
is the most luxurious liveaboard Phinisi boat
in the region, providing ultra modern and re-
laxing accommodation for up to 10 guests,
pampered by an experienced crew of 16.
The 46 foot long Alila Purnama consists of 3
decks and has been built by hand in the tra-
ditional style of a Phinisi as used by the Bugis
seafarers in south Sulawesi in Indonesia.
Five well-appointed suites, all air-conditioned
with queen-size beds, en suite bathrooms with
shower, separate toilet, double wardrobes
and writing desk. The master suite, expansive-

Up to 100 renowned international and Indo-nesian jazz musicians converged on the Bali-nese hillside com-munity of Ubud, August 9-10, 2013, to participate in the inaugural Ubud Village Jazz Festi-val.
In the grounds of the Arma Museum, a daz-zling program of world-class Jazz performers and musicians performed un-
der the stars over two nights, from twilight until late each evening.
The Ubud Village Jazz
Festival is the brainchild of Yuri Mahatma, jazz musician and one of the founders of the Bali Jazz Community together with Anom Darsana, of
Antida Music Produc-tions.
“The idea to hold an international Jazz Festival
was born after Se-rambi Arts Antida, Denpasar, was forced to close in 2012. Since then we have held high-
ly successful Jazz Rendez-vous events as a lead-up to this Festival. The musi-cians we invited support our mission to promote high-quality jazz from

The Ubud Village Jazz Festi-val, as part of its commitment to the community and sustain-ability only used LED lighting, home-made torches, bicycles for musicians to ride to and from venues, recycling bins and also enforced a no-plastic bags policy.
The Festival has already garnered widespread support from the Ministry of Tourism and Creative Economy, the Bali Tourism Board, Gianyar Re-gency, the creative arts com-munities of Bali and the people of Ubud.
After…all that jazz… in Ubud we move down south to Ta-man Bhagawan, Tanjung Be-noa, Nusa Dua and jazz it up again at this three day cultural festival in the garden by the sea. Eat, drink, shop and be merry 16 – 18 August from 2pm until 10pm. Opening night on 16th August features a special performance by Lisa Soul and Nyoman Sura as well as the legendary Ireng Maulana.

The skies came alive with the sounds of kites flapping in the wind at Padang Galak, Bali in July. The sky was teem-ing with over a thousand kites as the country’s 35th annual kite festival got underway. No miniature kites here - the bigger the better and the kites used in this competition were monstrous prod-ucts of inter-village rivalry, measuring around four meters in length and up to ten in width. This festival is a long standing Balinese belief that kites were a way to send messages to the gods and you’ll see that some of the more traditional kites were built in the shape of fish and birds, representing Hindu deities. These beliefs are still strong to this day, as com-petitors ensure blessings are performed throughout every stage of the competi-tion hoping it will bring them good luck.
Each of the kites is designed, built and flown competitively by groups from the villages of Denpasar. The at-mosphere at this festival is electric and the competition fierce, with rival groups cat calling and cheering if a competi-tor’s kite falls unceremoniously to the ground.

Congratulations to Ayu, 13 years of age, who re-cently received a trophy from Kumon School for her outstanding achievement in English. The children at-tend Kumon every Tuesday and Friday. This affords the children ‘one on on’ time with their teacher. Some-thing regular schools do not have the human resources to provide. Kumon classes are backed up by Rosanna White who helps the chil-dren with their daily home-work set by Kumon. Ayu is two years ahead of her level in English Language Stud-ies. All the children are now making great progress in their command of the Eng-lish language.

Sate Lilit Bali HIGHLIGHT RECIPE
Ingredients300 gm skinless snapper or flathead fillet, pin-boned,
coarsely chopped; 300 gm uncooked medium prawns,
peeled; 80 gm (1 cup) desiccated coconut, moistened
with 60ml coconut milk or water; 5 kaffir lime leaves,
thinly sliced; 1 tbsp dark palm sugar (see note); 10 thin
lemongrass stalks, cut into 15cm lengths, for skewers (see
note); Pinch of brown sugar mixed with 60ml vegetable
oil, for brushing.

1. For spice paste, process
ingredients (except tamarind
paste and oil) in food processor
until a fine paste forms, add a
little water if necessary. Add oil
and spice paste to frying pan
over medium heat and stir-fry
until fragrant (5-6 minutes). Add
tamarind and stir frequently
until paste turns golden (3 min-
utes), then set aside to cool.
2. Process fish and prawns in
food processor until blended,
then transfer to a bowl and mix
with coconut, lime leaves, palm
sugar and spice paste. To test
the flavor, fry a little mixture in
oil until cooked through. Adjust
seasoning to taste if required,
then mould heaped table-
spoons of mixture onto one end
of lemongrass stalks.
Heat char-grill pan over
high heat. Grill satay, turn and
brush occasionally with brown
sugar and oil mixture, until
golden and cooked (5-6 min-
utes each side). Serve hot.
Note Dark palm sugar is made from coconut palm; If
lemongrass is unavailable, you can use bamboo paddles
or wooden chopsticks as skewers. Soak them in water for
20 minutes then dry them before using. Candlenuts and
shrimp paste are available at Asian grocers; Shrimp paste
requires roasting before use; preheat oven to 200C, wrap
it in foil and roast until fragrant (5 minutes).
Spice paste1 vine-ripened tomato, coarsely chopped; 25 gm
(5cm piece) each ginger and fresh turmeric, coarsely
chopped; 4 each long red chilies and red birds eye
chilies, coarsely chopped; 4 garlic cloves, coarsely
chopped; 3 small golden shallots, coarsely chopped; 5
candlenuts (see note); 2 lemongrass stalks, white part
only, finely chopped; 2 tsp coriander seeds; 1 tsp shrimp
paste ( see note); ½ tsp black peppercorns, finely
crushed; 80 gm (¼ cup) tamarind pulp, mixed with 60ml
water, strained, solids discarded; 50 ml vegetable oil.
