Uncertainty around high grainprices and Mother Nature aretwo big issues facing producersthis spring.
“Crop prices are up signifi-cantly over last year – roughly 25to 50 per cent higher on aver-age,” says Charlie Pearson,provincial crop market analyst,Alberta Agriculture and Rural De-velopment, Edmonton. “It’s a de-mand-led price rally where theworld is consuming more thanwe’re producing. World grain sup-plies are extremely tight, and thatfuels prices.
“The tight supplies and highprices are driven by a number offactors, including a growing world
economy, growth in Asia, and aU.S. ethanol policy that now ac-counts for 40 per cent of Ameri-can corn production.”
It’s certainly looking like a yearfor optimism, says Pearson, butthe question bothering many pro-ducers is whether crop prices willremain at these high levels be-tween now and harvest. “Pricescould climb higher, but there areseveral reasons why they coulddecline in the months ahead.”
Social instability in NorthAfrica and the earthquake inJapan have already caused pricevolatility, he notes. “Weather isanother major factor. If MotherNature cooperates and we havebumper crops worldwide, priceswill come down. On the other
hand, lousy weather and poorcrops will push prices higher.”
The economy and the Cana-dian dollar are also wild cards,says Pearson.
As the April 30 deadline toapply for crop insurance in Al-berta approaches, Pearson sug-gests producers sit down andcarefully plan how to manage therisks in front of them – both theirprice risk and their weather risk.
If grain prices do drop, hesays, a crop insurance ridercalled the Spring Price Endorse-
ment (SPE) could prove to bevaluable. The SPE, available onlyin Alberta, insures producersagainst price drops of 10 to 50per cent between the spring andfall.
“Of course, weather is alwaysthe greatest risk farmers face, sothe production guarantee thatcrop insurance provides will bevery important again this year,”says James Wright, AgricultureFinancial Services Corporation,which delivers crop insurance inAlberta.
In the Peace Region, drygrowing conditions over the pastfew years continue to cause con-cern for producers, says Wright.In southern Alberta, farmers areonce again worried about excessmoisture. To qualify for the Un-seeded Acreage Benefit, Wrighturges farmers to declare all acresthey intend to seed – whetherthey plan to insure them or not.

contact their nearest AFSC officeor the AFSC call centre at 1-877-899-AFSC (2372) before theApril 30 deadline. Producers arealso reminded that April 30 is thedeadline to submit 2011 AgriSta-bility enrolment fees withoutpenalty. Because these dead-lines fall on a Saturday, crop in-surance applications andAgriStability fees will also be ac-cepted on Monday, May 2.

Remember the old TV adabout the guy who liked his elec-tric razor so much, he bought thecompany that made it? Today, theidea of customer-turned-owner isalive and well at Calgary’sFairview Bakery.
Eight years ago, Leang Ly op-erated a catering truck businessand was a regular buyer ofFairview’s sausage rolls. Whenthe owner of the bakery decidedto sell the business, Ly jumped atthe chance to buy it. For Ly, whocame to Canada in 1981 as arefugee from war-torn Cambodia,the purchase was the latestchapter in a remarkable personaljourney.
Since then, Fairview Bakeryhas been in growth mode, mov-ing to a larger facility and up-grading its processingequipment.
“In terms of production, we’vemade a lot of major changes overthe past year,” says general man-ager Dennis Cressman, a formeremployer of Ly who came out ofretirement to run this nine-personbusiness. “We installed newovens, new handling equipmentand new software to make theprocess operate better. As well asmaking us more efficient, thesechanges have also improvedfood safety.”
As a customer, Ly knew howgood the bakery’s sausage rollswere. Expanding production ca-
pacity has been key to meetinggrowing market demand. Thebakery’s new system can pro-duce in a half-day, a volume thatused to take two full days. Savingthis time allows more scope forthe bakery’s rigorous cleanlinessand sanitation program.
Mechanically, making asausage roll is straightforward.The process involves producingthe dough, mixing the meat filling,depositing the meat filling, bak-ing, cooling the rolls and finallyfreezing them before shipping. Interms of food safety, however,making a Fairview Bakerysausage roll requires a great dealof care and the right kind ofequipment.
“For safety, 4°C is critical,”says Cressman. “Refrigeratedproduct must be maintained at amaximum of 4°C, and frozenproduct at -18°C or lower. If yougo above 4°C, it will encouragethe growth of bacteria. With ournew coolers and freezers, wehave more reliable control overthe temperature of the food.”
At its previous facility, the bak-ery had one small and one largewalk-in freezer. Now, FairviewBakery has two coolers, fivefreezers and more precise tem-perature control. New softwaresends Cressman a report everythree seconds on facility temper-atures and maintains a databaseof previous readings. The new fa-
cility has segregated productionlines for raw and baked products,extending from the main produc-tion lines through to shipping. Asthe final element of its upgrade,Fairview Bakery introduced newprotocols for equipment cleaningand preventative maintenance.
Fairview Bakery’s equipmentupgrade was cost-shared 50-50with the federal-provincial Grow-ing Forward Food Safety Proces-sor Program. This program helpsprocessors improve their foodsafety practices in several ways -through adoption of food safetysystems, undergoing food safetyaudits, participating in food safetytraining or through capital equip-ment purchases that directly im-pact food safety. Capitalpurchases can be cost-shared50-50 to a maximum of $50,000,while the program will pay up to70 per cent of non-capital costsup to $25,000.
“For Fairview Bakery, foodsafety is not just a business re-quirement, but a core part of theculture and philosophy of thecompany,” says Monika Frank-Ruediger, safe food system spe-cialist, Alberta Agriculture andRural Development, Airdrie.“They are very proactive in re-gard to food safety and by mak-ing these investments, and arepositioning themselves for a suc-cessful future as an Alberta foodprocessor.”
