Silent Auction • Live Auction • Bake SaleIn January Laura was di-agnosed with Myelodys-plasia Syndrome (MDS), which progressed to Acute Myeloid Leuke-mia one month later. She spent the month of March at Methodist Hospital in Rochester having chemotherapy
and receiving blood/platelet transfusions.
Early April she was able to come home. On May 9th in which she is scheduled to go back to the Methodist Hospital to have another round of chemotherapy followed up with a round of radiation in preparation for her stem cell transplant on May 14th. She will then go to the Gift of Life transplant house until she is well enough to go home.
We hope that you can join us at her benefit to help raise money to as-sist with the bill that are accumulating.

1⁄2 lb ground turkey breast1 (15-oz.) can Hy-Vee black beans, rinsed and drained1⁄2 cup chunky salsa1⁄2 tsp ground cumin1 cup shredded reduced-fat Cheddar cheese (4 oz)Salt and pepper, to taste8 (8-inch) whole-wheat tortillasAdditional salsaAll you do1. Preheat oven to 375°F. Coat a baking sheet with nonstick cooking spray. In a medium nonstick skil-let cook ground turkey, stirring occasionally, until no longer pink. Stir in beans, salsa, cumin and cheese. Season with salt and pepper to taste.
2. Spoon about 1⁄2 cup of the turkey mixture on halfof each tortilla. Fold tortilla over filling and place on baking sheet.3. Coat the tops of the quesadillas with nonstick cooking spray. Bake 10 to 12 minutes or until the edges begin to brown. 1⁄2 lb ground turkey breast1 (15-oz.) can Hy-Vee black beans, rinsed and drained1⁄2 cup chunky salsa1⁄2 tsp ground cumin1 cup shredded reduced-fat Cheddar cheese (4 oz)Salt and pepper, to taste8 (8-inch) whole-wheat tortillasAdditional salsaAll you do1. Preheat oven to 375°F. Coat a baking sheet with nonstick cooking spray. In a medium nonstick skil-let cook ground turkey, stirring occasionally, until no longer pink. Stir in beans, salsa, cumin and cheese. Season with salt and pepper to taste.
2. Spoon about 1⁄2 cup of the turkey mixture on halfof each tortilla. Fold tortilla over filling and place on baking sheet.3. Coat the tops of the quesadillas with nonstick cooking spray. Bake 10 to 12 minutes or until the edges begin to brown. Silent Auction • Live Auction • Bake SaleIn January Laura was di-agnosed with Myelodys-plasia Syndrome (MDS), which progressed to Acute Myeloid Leuke-mia one month later. She spent the month of March at Methodist Hospital in Rochester having chemotherapy
and receiving blood/platelet transfusions.
Early April she was able to come home. On May 9th in which she is scheduled to go back to the Methodist Hospital to have another round of chemotherapy followed up with a round of radiation in preparation for her stem cell transplant on May 14th. She will then go to the Gift of Life transplant house until she is well enough to go home.
We hope that you can join us at her benefit to help raise money to as-sist with the bill that are accumulating.
