Ma’s Country Kitchen APPLE PILLOW WITH NUTS 450g granny smith apples (1 Ib) 1 clove 15 g hazelnuts (1/2 oz) Liquid artific ial sweetener to taste 1 level teaspoon lemon rind, finely grated 2 tablespoons water 1 level tablespoon honey 2 egg whites Clean app l es and core, then slice. Place slices in saucepan with the clove, water and l emon rind. Cover and cook over a low heat until the apples are soft . Throwaway clove and stir in honey . Add artificial sweetener to taste. Let this container cool . Whisk egg whites until stiff, fold into apple puree and whisk again until fluffy. Divide into 4 serving dishes. Chop hazelnuts and sprinkle on top, refrigerate until serving. Total serves 4. Total calories 300. Malcolm Doyle Success! Malcolm appears at our Gawler Country Music Club on Sunday 17th November. He was kind enough to send in information on his background and the release of his award winning song "The Mailman of the Outback". Last year I released my first CD. The album was recorded at Charlie McCracken's Refinery Studio for CBM Records. With a lot of help and patience by Charlie and music by Mike Festa, Steve Morabito and backing vocals by Fran Stoker and mastering at Disk -Edi ts , we are extremely pleased with the finished product. I learnt the guitar as a child and as a teenager played in a square dance band. This is where I met my wife Helen . The song " You Captured My Heart" tells my side of the story. There are ten tracks on the CD, six originals and four covers. One Slim Dusty and one Jimmy Little . There are also two songs written by the late Mal Ri ce . I have been song-writing since 2009 and was surprised and pleased when my third song "The Mailman of the Outback" won The APRA/CMSA Traditional Country of the Song of the Ye ar 2011. I had seen the film "The Back of Beyond" at the Shell Theatre with my father when I was about ten years old and the song tells the story of the late Tom Kruse MBE . I am a member of the Southern Country Music Club and have been the Secretary for a number of years. Next year (2014) I have been invited to Tamworth and Peter Coad of the Australian Bush Balladeers Association has included me on the roster of performers. I am looking forward to it as it will be my first time in Tamworth.` In the meantime I am continuing with my song writing. See CD review on page 7

Ma’s Country Kitchen

APPLE PILLOW

WITH NUTS 450g granny smith apples (1 Ib)

1 clove

15g hazelnuts (1/2 oz)

Liquid artificial sweetener to taste

1 level teaspoon lemon rind, finely grated

2 tablespoons water

1 level tablespoon honey

2 egg whites

Clean apples and core, then slice.

Place slices in saucepan with the clove, water

and lemon rind.

Cover and cook over a low heat until the

apples are soft.

Throwaway clove and stir in honey.

Add artificial sweetener to taste. Let this

container cool.

Whisk egg whites until stiff, fold into apple

puree and whisk again until fluffy.

Divide into 4 serving dishes. Chop hazelnuts

and sprinkle on top, refrigerate until serving.

Total serves 4. Total calories 300.
