In fact, fall's orange gourds probably have way more health benefits than you think. And now that the nearly year-long pumpkin shortage is over, it's time to dig in! In the old days, pumpkins were recommended for removing freckles and curing snake bites. Now, they make a yummy facial: Real Housewives star, Bethenny Frankel, has created a pumpkin mask to pamper and hydrate your skin. Way back when, Native Americans used pumpkin seeds for food and medicine to treat things like digestive problems. Now, we mainly roast the pepitas and eat them as they are or grind them up and use them in recipes for things like pumpkin seed pesto. But the nutrients haven't changed over the years -- and there are plenty. Pumpkins are loaded with the antioxidant beta-carotene. This can reduce the risk of some cancers and protect against heart disease. They're also high in fiber, potassium, and magnesium to help keep your body running in tip- top shape. In early colonial times, gourds (and their nutrients) were used to their fullest. This year, let's take a cue from our ancestors and see how much you can get out of that pumpkin. to our MOPS meetings throughout the year. There is a sign up sheet at each meet-ing so you can sign yourself up. We need the following

You can bring your favorite Brunch food to share or try out a new recipe! We need food for 15-20 people, so

your help is greatly appreci-ated!

Easy Egg Casserole Ingredients

• 1 pkg. Pork Sausage

• 10 eggs, lightly beaten

• 3 cups milk

• 2 teaspoons dry mustard

• 1 teaspoon salt

• 6 cups cubed bread

• 2 cups shredded sharp Cheddar

cheese

• 1/2 teaspoon black pepper

• 1/2 cup sliced mushrooms

(optional)

• 1 medium tomato, seeded and

chopped (optional) 1/2 cup thin-sliced green onions (optional)

Directions

Preheat oven to 325 F. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, com-bine eggs, milk, mustard and salt; stir well. Distribute half the bread evenly in a buttered 9" x 13" x 2" baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half of each optional ingredient. Repeat lay-ering the casserole using remaining bread, pepper, cheese, sausage and optional ingredients. Pour egg mixture evenly over casserole. Bake the breakfast casserole un-covered for 55-60 minutes, or until eggs are set. Tent with foil if top of breakfast casserole begins to brown too

quickly.

Note: May be assembled ahead and refrigerated up to 12

hours before baking.

Pumpkin Bread

Ingredients

• 31/2 cups Flour

• 2 teaspoons Baking soda

• 1 teaspoon Salt

• 1/2 teaspoon Baking powder

• 1 teaspoon Cinnamon

• 1 teaspoon Pumpkin pie spice

• 3 cups Sugar

• 1/2 cup Cooking oil

• 4 Eggs

• 2 1/2 cups Canned Pumpkin

• 1/4 Water

Directions

1. In a large mixing bowl combine the flour, baking

soda, salt, baking powder, cinnamon, and pumpkin pie spice.

2. In a separate bowl, mix by hand the sugar, oil,

eggs, pumpkin, and water.

3. Combine with the dry ingredients.

4. Bake in 9×5 loaf pans at 350 degrees for 90 min-

utes, checking after 1 hour. Yield: 2 Loaves

Notes

• I also like to use this recipe to make a dozen muffins and four mini-loaves. Decrease the

baking time accordingly. (about 30 min.)

• The 2.5 cups of pumpkin can be replaced by the same quantity of other fruit. Bananas,

apples, cranberries, figs – all good choices. Try adding leftover jars of baby food to the mix.

• These freeze very well.
