Apple Upside Down Pastry with Balsamic Vinegar SauceI N G R E D I E N T S

8 oz. frozen puff pastry1 cup sugar2 apples, sliced2 Tbsp. Monari Federzoni

Balsamic Vinegar

D I R E C T I O N S

Roll out puff pastry. In a pan, heat sugar to caramelize and pour into a greased cake tin. Cover with apple slices then the puff pastry. Bake at 350º F for 45 minutes. Remove carefully. For the sauce, heat Balsamic Vinegar with cream and sugar until reduced (about 5 – 10 minutes). Pour over cake and garnish with whipped cream.

Mom’s Sausage and Pepper HoagieI N G R E D I E N T S

1 lb. Italian sausage links1/2 cup water1 green bell pepper, julienne1 red bell pepper, julienne1 large onion, sliced

Brown sausages in a skillet on medium heat for 5 – 10 minutes. Turn 2 – 3 times. Add water and bring to a simmer. Cover, reduce heat and simmer 10 minutes. Drain on paper towel. When cool, slice 1/4-inch thick. Add bell peppers, onion, oregano and basil to skillet, adding oil if needed. Stir-fry until vegetables are crisp-tender (about 5 minutes). Return sausage to skillet and add the pasta sauce. Heat through and serve on hoagie rolls. Serves 4.

Trim ribs of fat and place in a crock pot along with remaining ingredients. Simmer for 5 hours, or until tender. Remove ribs from marinade. Place ribs in a casserole dish and brush with remaining marinade. Sprinkle with salt and pepper and bake at 350º F for 30 minutes. Remove and serve as desired. Serves 4.

1 Tbsp. ground sumac1 tsp. garlic powder1 tsp. white vinegar1 tsp. salt1 tsp. black pepper 1 box Basmati rice

In a bowl, combine the ground sumac, garlic powder, white vinegar, salt and black pepper. Place chicken pieces in mixture and allow to marinate for at least 30 minutes. Prepare rice as directed, set aside. Thread chicken and vegetables alternately on metal or wood skewers. Grill over medium-high heat, turning frequently, until desired doneness. When cooked through, carefully remove skewers and serve over the prepared rice. Makes 6.

Fish MasalaI N G R E D I E N T S

2 lbs. boneless fish (salmon, cod or tilapia), cut into cubes

1 packet Peacock Spice Company Fish Masala Spice Blend

Salt (as needed)Lemon juice (as needed)

D I R E C T I O N S

Rub the fish cubes with 1/2 tsp. of the Fish Masala Spice Blend, salt and lemon juice. Set aside. Heat the oil in a heavy-bottomed pan and sauté the onions on medium heat for about 2 minutes, or until the onions are light brown. Add the tomato pieces and fry until the oil leaves the sides. Add water, mix well and bring to a boil. Add the fish cubes and salt to taste. Turn heat to low and simmer for about 10 minutes. Fish should be cooked thoroughly, firm but flaky. Enjoy hot with white rice and bread. Serves 4 – 6.

Cut sausage into pieces. Sauté onions and green bell pepper together. Add sausage. Remove from pan. Place tortilla in large pan over medium heat and add cheese to cover tortilla. Add 1/2 of the sausage and onion/bell pepper mixture. Add more cheese to cover sausage and place another tortilla over top of cheese. Flip tortilla over when cheese has started to melt and tortilla begins to crisp. When the other side begins to crisp, remove from pan and allow to cool. Cut into 4 – 6 pieces. Add favorite toppings such as salsa and sour cream as desired. Makes 2.

In a medium pot, soak beans overnight in enough water to cover. Drain and rinse. Heat oil in a deep pot over low heat. Add flour, onions and garlic. Cook, stirring frequently, until light brown. Add Creole seasoning, sausage and beans with enough water to cover. Cook slowly until beans are tender (about 1 hour), stirring often. Serve over steamed rice and garnish with green onions. Serves 6.
