Heat oil in a skillet over medium heat. Stir in peppers, onion and crushed garlic and cook until softened. Stir in artichokes, parsley, olives and lemon juice. Season to taste with salt and pepper and remove from heat. Arrange bread on a baking sheet. Broil 4 – 6 inches from heat until toasted on 1 side. Remove from oven and turn the slices over. Spoon mixture equally on the untoasted side of the bread and sprinkle with cheese. Serves 12.

3 eggs3 egg yolks3/4 cups sugar2 cups half-and-half1/4 cup rum

Preheat oven to 475°F. In a large mixing bowl, whisk together eggs, egg yolks, sugar, half-and-half, rum, vanilla and nutmeg. Pour in Panettone cubes and mix well. Ladle mixture evenly into a muffin tin. Bake for 15 – 20 minutes, or until muffins are golden brown and an inserted toothpick comes out clean. Remove from oven and let cool. Carefully remove muffins from tin, sprinkle with cinnamon sugar to taste and serve. Makes 12.

Preheat oven to 350°F. Heat sugar in a small, heavy-duty sauce-pan over medium-low heat, stirring constantly, for 3 – 4 minutes, or until dissolved and caramel-colored. Pour into a 9-inch round cake pan; quickly swirl around bottom to coat. Place La Lechera, milk, eggs and vanilla extract in a blender, cover and blend for 5 seconds. Pour into the cake pan and cover loosely with foil. Place into a large roasting pan and fill roasting pan with warm water to about 1-inch depth. Bake for 50 minutes or until knife inserted near center comes out clean. Remove flan from water and let cool on a wire rack. Refrigerate 4 hours or overnight. To serve: run a small spatula around the edge of the pan. Invert serving plate over pan, turn over and shake gently to release. Serves 8.

In a saucepan, heat 3 cups of milk with the sugar and Ibarra Chocolate over medium heat, blending thoroughly. In a separate bowl, dissolve the cornstarch in the remaining milk and blend with the egg yolks. Just before the milk in the pan starts to boil, add the cornstarch mixture and stir well. Reduce the heat and stir constantly until creamy. Remove from heat and let cool. Add

pecans and pour into individual molds. Garnish each mold with a cinnamon stick if desired and refrigerate until set. Serves 4 – 6.

1 cup chocolate wafer cookie crumbs (about 20 wafers)

1 cup finely chopped Sunrise pecans2 Tbsp. sugar1/4 cup margarine or butter, melted3 (8 oz.) pkgs. cream cheese, softened

Preheat oven to 300°F. Combine cookie crumbs, pecans, sugar and margarine; press firmly on bottom of a 9-inch spring-form pan. Beat cream cheese in a large mixing bowl until fluffy. Add eggs and flour, beating until smooth. Gradually beat in cream of coconut. Measure out 11/2 cups of the cream cheese mixture into a separate bowl, then stir in the melted chocolate. Pour into the prepared pan. Slowly pour the remaining cheese mixture over chocolate layer; swirl if desired. Bake for 1 hour or until firm around the edges. Remove from oven and chill thoroughly in refrigerator. Carefully remove pan and garnish as desired.

Preheat oven to 350°F. Season roast thoroughly with salt and pepper. Place roast bone-end up in a shallow roasting pan; set aside. In a separate pan, sauté onions, celery and garlic in oil over medium heat until onions are translucent. Place mixture in a bowl and add remaining ingredients (including oyster liquid) and mix well. Season stuffing with salt and pepper to taste. Let rest for 10 minutes then fill center of roast with stuffing. Bake for 20 – 30 minutes, or until temperature reaches 160°F. Remove from oven and let rest for 15 minutes. For glaze: Add all ingredients to a pan and reduce over high heat to a syrup consistency. Adjust sweetness with brown sugar as desired.
