Strawberry Shortcakes3 to 4 pints strawberries,

hulled and quartered lengthwise2 to 4 tbs. sugar7 to 2 tbs. lemon juice7 cup heavy cream

For the Biscuits2 cups plus 2 tbs. flour7/4 cup sugar, plus more for sprinkling7 tbs. baking powder7 tsp. salt7 7/2 cups heavy cream

Preheat oven to 425ºLine a large baking sheet with parch­ ment paper. Place berries .in bowl and sprinkle with sugar and lemon juice to taste. Stir gently, then let stand until some syrup forms, at least 30 min­ utes. Whip cream to soft peaks, and refrigerate until serving.

Make the biscuits: In a bowl, stir flour, sugar, baking powder, and salt. Use fork to make a well in dry ingre­ dients and pour in cream. Working from center toward bowl's edge, use fork to stir dry ingredients into cream until just blended. The dough will be sticky and lumpy. Using large spoon, scoop dough portions the size of small lemons onto prepared pan. You should have 12 biscuits. Sprinkle tops with sugar. Bake until lightly golden,15 to 17 minutes. Let cool for at least15 minutes on pan, then slice in half horizontally. Biscuits are best served within a couple of hours of baking, but may be refreshed in hot oven. Or freeze some unbaked for another time(bake frozen biscuits for 30 minutes).Assemble the shortcakes: Just before serving, place biscuit bottoms, cut side up, in individual bowls, top with strawberries, some syrup, and whipped cream, and then biscuit tops. Surround with more berries. Makes 12.

MSC  installing  a  new  1"  line  for  water.  This  is  will  be  an  added  benefit  to  help  with  watering,  washing,  etc.  this  summer.  We  are  also  working  on  a  full  scale  irrigation  solution  with  the  school.  They  have  some  BIG  irrigation  for  sports  fields  that  we  can  tap  into.

The deer fenceis  up  and  working!  No  sign  of  any  deer  tracks  in  the  soft  earth  -­‐  just  a  few  fox  tracks!  

That's  a  good  sign.  I  got  a  glimpse  of  two  gray  fox  kits  just  the  other  morning!  They  were  in  front  of  their  den  playing  in  the  sun.  Glad  they're  here  -­‐  their  presence  should  deter  "varmints"  lower  in  the  food  chain.

Universal RecyclingQ) What is Universal recycling?A) Universal Recycling is a new State Law, which requires all trash haulers, including municipalities, to provide single-stream curbside recycling service to their customers by delivering an appropriate sized recycling cart and collecting recycling at least once every two weeks.Q) Do I have to use my recycling cart?A) No, the law does not require you to recycle, but the intention of the law is to make recycling convenient to residents by providing curbside service.  Trash haulers must provide EVERY customer a recycling cart regardless if they want to participate.  Trash companies may or may not increase their charge for this service but they must provide both services for a set price.Q) What is single-stream recycling?A) Single-Stream recycling is a recycling process in which materials are collected all mixed together with no sorting required by the customer. So cans and bottles can be recycled together with newspaper, cardboard, etc. Once collected the recyclables will be taken to a Materials Recovery Facility (MRF) and separated.Q) What happens at a MRF?A) A MRF uses a system of sorting mechanisms, which can separate the recyclables into individual material groups in preparation for sending to their respective market.Q) What exactly can I put into my single-stream cart?
