Original paintings of New Castle private gardens, and other areas are being sold in the Academy for this new "Plein Air" Artists Event. 10AM until 4PM on the day. Over 22 artists will paint 45 of New Castle's beautiful private gardens, buildings, and streetscapes on May 18-20, 2011. These paintings will be displayed and sold at the Academy Building on the Green on May 21st as part of the DIONC festivities. Volunteers are needed to help with staffing the

No Derby Party is complete without the Mint Julep, the traditional beverage of Churchill Downs and the Kentucky Derby. Each year, almost 120,000 Early Times Mint Juleps are served over the two-day period of the Kentucky Oaks and Kentucky Derby. This is a feat that requires over 10,000 bottles of Early Times Mint Julep Ready-to-Serve Cocktail, 1,000 pounds of freshly harvested mint and 60,000 pounds of ice.

Make a simple syrup by boiling sugar and water together for five minutes. Cool and place in a covered container with six

or eight sprigs of fresh mint, then refrigerate overnight. Make one julep at a time by filling a julep cup with crushed ice, adding one tablespoon mint syrup and two ounces of Early Times Kentucky Whisky. Stir rapidly with a spoon to frost the outside of the cup. Garnish with a sprig of fresh mint. Or perhaps a

Glazed Cocktail Franks1 package Boar’s Head Cocktail Franks1 jar of Boar’s Head Brown Sugar & Spice Ham Glaze5 tbs. pineapple juice4 tbs. crushed pineapple

❧ Separate Boar’s Head Cocktail Franks, removing string.

❧ In saucepan, mix Brown Sugar & Spice Glaze, pineapple juice and crushed pineapple over low heat until blended and add Franks. 

❧ Cook slowly over medium heat until Franks are warmed through, stirring frequently.  Do not boil. Serve in chaffing dish.

Pickled Shrimp2 pounds shrimp - boiled and chilled 2 medium purple onions sliced in rings 1 cup vegetable oil 1 1/2 cup white vinegar 1/2 cup sugar 1 1/2 teaspoons celery seed 4 t capers

❧ Make alternate layers of shrimp and onion slices in bowl.

❧ Mix all other ingredients and pour over.

❧ Refrigerate 6 or more hours stirring occasionally.

❧ Serve as hors d'oeuvre with crackers or tooth picks or serves 6 as a salad on top of lettuce.

Benedictine Spread by Chef Mark Williams for Brown-Forman Corporation

This spread can be used as a dip or a sandwich & canapé ingredient. It was made popular at Louisville's Benedict's restaurant earlier in this century.

❧ 1 large cucumber

❧ 12 ounces cream cheese, softened❧ 2 tablespoons grated onion

❧ 1/4 tsp salt❧ 1 tablespoon mayonnaise

❧ Pinch of cayenne or tabasco dash

❧ Green food coloring (optional)  

❧Pare, grate, and drain

cucumber. Combine with remaining ingredients in food processor. Serve as is

or as a sandwich or canapé spread.

Thin with sour cream to make a dip for vegetables.
