EMPLOYEE OF THE MONTH:
May 2011
ALBERTO CHAVEZ
(Marisu’s Message Corner)
Marisu JimenezGeneral Manager
Alberto Chavez has been a member of the Athenaeum kitchen team for six years. Alberto performs his stewarding responsibilities with great eagerness and diligence. He prepares the kitchen for its nightly dinner service and sets up for the next morning’s breakfast. He provides the chefs the supplies and food items needed and keeps the kitchen clean and organized on a routine basis. He shared that the announcement of this award came as a great surprise and that the congratulatory wishes from his co-workers has been a true compliment. Alberto and his wife Patricia, have also been married for six years. Together they have two young daughters, Hillary (age 4) and Emily (age 3) and reside in Pasadena. As a family, the Chavez’s enjoy outings in the park and most recently teaching Hillary and Emily how to ride a bike. Alberto also pursues his interest in cars, mechanics, and welding. His welding course at Pasadena City College has provided an opportunity to provide The Athenaeum with fix-it skills around the kitchen. It is Alberto’s willingness to assist, welding proficiency, and thoughtful nature that made him the noteworthy choice of this month’s award.
Congratulations Alberto!Thank you for being a great example of
The Athenaeum at its best!
It’s back and in full force… the Rath al Fresco! What would summer be like at the Ath without this open-air diversion? Everyone has been eager to sit outdoors with friends and family to enjoy the wonderful Southern California weather. Rain and showers during opening week did not dishearten members. On our May opening day attendance was at 300 strong. The sun seemed to come out just for the al Fresco that Friday. Since summer has not fully arrived, remember to bring a thick sweater or jacket if you would like to hang
out till the 9pm closing time. We’ve had some June gloom but hope for a warm yet balmier July.
Every year, Chef Kevin improves the Rath al Fresco menu. New this year and quickly gaining popularity are the appetizer platters. It is most difficult to pick one, because they are all excellent. Absolutely try a new one on each of your visits. There is a selection of the taco, Mediterranean or comfort platter, each offering a varied selection of tastes. Then there is the macaroni and cheese bites appetizer that just explodes in your mouth. Definitely get one for yourself as this is not to be shared. These are just teasers, there is a lot more to experience. Reservations required only for groups of 10 or more. Come spend a lazy afternoon at the Rath al Fresco – our grills and ovens are fired so you don’t have to fire yours!
Jerry Rodriguez, food and beverage director also makes sure that we have the perfect beverage to accompany the food. The ubiquitous mojito, made by Mike, our bartender, is hard to pass up. Other drink creations include Paloma (tequila, grapefruit juice, lemon lime soda), sangria blanca (white wine, peach liqueur and fruit) and sunsplash (citrus vodka, orange and cranberry juice, sour). There is beer on tap, bottled beer and wines by the glass, in 750 ml and in 375 ml bottles too. There is a wide selection of pseudo (non-alcoholic) cocktails. My favorites are the creamsicle and the blackberry lemonade. Come and spend just one afternoon with us and we know that you will be back more than once.
Our themed family nights on Monday evenings – July 11 and 25 – guarantee loads of fun for the entire family. Carnival games on July 11th will be on the lawn for the young and young at heart. And, from the big screen to the Athenaeum lawn come the pirates on Monday, July 25. Needless to say, the buffet displays at each of these evenings will not be wanting.
Want some quiet and more serene dining? The dining room will be open Tuesdays through Fridays for the summer. A la carte dining will be closed on Mondays. A new summer menu will feature the best ingredients of the season and a lighter tone on entrées.
The buffet breakfast will be in place starting Tuesday, July 5th while the á la carte menu goes on hiatus for the summer.
I look forward to seeing you all at The Athenaeum. Please drop by my office when you are next at the club.

Executive Chef Kevin’s Recipe Corner
Enjoy Cooking! Serves 8
Cedar Plank Salmon
One 2 ½" to 3" side of salmonSalt and black pepper to tasteGinger barbecue sauce (see recipe below)One 15” x 7” x 1” food grade cedar plank (available at some barbecue stores and online)
Ginger Barbecue Sauce1 ⅓ cups apple cider vinegar½ cup water¾ cup brown sugar¾ cup tomato sauce or ketchup½ cup molasses8 cloves garlic, minced1 jalapeno, seeded and finely chopped¼ cup grated ginger2 tsps salt1 tsp black pepper
1. Soak cedar plank in water for 3 hours.2. Pat salmon side dry with paper towels and remove all skin and bones.3. Marinate the salmon on both sides of the fillet with 2 cups of the barbecue
sauce for at least 1 hour.4. Remove the cedar plank from the water and let drain. Place the salmon side
on top of the cedar plank and place in a pre-heated 275 degree barbecue with a lid. Be sure to place the planked salmon on indirect heat, not directly over the flame. If the plank begins to burn, you may place a pan on top of the barbecue and place the plank on top of that. Close the lid and let cook for approximately 30-45 minutes, depending on the size and thickness of the salmon.
Ginger Barbecue Sauce Directions
1. Place all ingredients in a medium sized sauce pot and bring to a simmer over medium heat. Let simmer slowly for 20-30 minutes. Place the mixture into a blender and puree.
