Food industry is witnessing tremendous growth with more and more of the population shifting towards, semi-processed or Ready-to-Eat foods. Today’s consumers are more demanding when it comes to quality and nutritive value of the product. The brand that satisfies the consumer survives in the market. In simple words the final response of consumer to a product is either like or dislike. Sensory evaluation is a measurement of product characteristics as perceived by human senses. Sensory evaluation is a technique used in industries like food and beverage, (especially in dairy foods; wine and beer; tea and coffee) to judge or predict the acceptability for a product by the consumer at the other end. In any product flavour, color & appearance, taste and texture are the characteristics that determine its sensory attributes. Sometimes a newly developed product may be targeting special groups of consumers such as children, geriatrics, etc. In that case the product’s sensory characteristics should be appealing to the particular group if it needs to flourish in the market. Sensory evaluation also helps in evaluating the effect of various added ingredients, manufacturing process operations, packaging method and material used; helps in determining the product stability and shelf life. Although there are various methods by which a product can be evaluated for sensory qualities, it is often difficult to replicate the human responseto a product by either instrumental or chemical method. The information obtained through sensory evaluation can be accurate and useful provided the panels of judges are well trained and are capable of applying their technical knowledge and skills in judging the product. The present scenario demands the technocrats to sharpen their skills in judging the products and to update with the latest research innovation and techniques. Keeping this in view the Alumni Association of SMC College of Dairy Science in collaboration with Faculty of Dairy Science, Anand Agricultural University, Anand is organizing the11 th National Dairy Product Judging Contest on 11 th September, 2014 and 7 th Dairy & Food Quiz on 12 th September, 2014. We have been receiving constant encouragement and support from academic institutes and dairy industries reflected in the increasing participation of contestants with every year. We are eagerly looking forward to meet you with your teams at these events where the human sense and intelligence take the stage. From the Patron...Food industry is witnessing tremendous growth with more and more of the population shifting towards, semi-processed or Ready-to-Eat foods. Today’s consumers are more demanding when it comes to quality and nutritive value of the product. The brand that satisfies the consumer survives in the market. In simple words the final response of consumer to a product is either like or dislike. Sensory evaluation is a measurement of product characteristics as perceived by human senses. ALUMNI ASSOCIATION ACTIVITIESThe 35thmeeting of the Executive Committee of Alumni Association was held on 14th March, 2014 at SMC College of Dairy Science, AAU, Anand. The meeting was attended by the members and invitees from the industry and academia. Dr. J B Prajapati, President, Alumni Association, welcomed the members and invitees and briefed regarding the purpose of the meeting. Dr. B P Shah, Patron of the Alumni Association chaired the meeting. Minutes and action taken report of 34th Executive Committee meeting held on 4th May, 2013 was approved. Dr. H G Patel, Secretary, Alumni Association, presented report on 10th National Dairy Products Judging Contest and 6th National Dairy & Food Quiz held during 17-18 September, 2013. Plans for the upcoming events, 11th National Dairy Products Judging Contest and 7th National Dairy & Food Quiz to be organized during 11-12, September 2014 were discussed in detail. It was decided to keep Milk, Dahi and Ghee for judging contest. Also, it was decided to organize a “Producer consumer forum” where in the consumers and producer’s can interact. The dates of the 11th Alumni convention and National seminar are fixed 8-9, January 2015 and the theme for National seminar is “Indian Dairy Industry: Opportunities and Challenges”. The distinguished alumni as well as graduates and post-graduates of 1989 and 1990 will be honored during the convention. At this meeting, it was also resolved to honor the past alumni (before 1989), who could not attend our previous convention. The members of the house discussed in detail about the possibilities to improve the placement of our graduates. The meeting ended with votes of thanks by Dr. H G Patel, secretary of Alumni Association.

Guest Lectures

Prof. Hitesh Bhatt from IRMA, Anand delivered a lecture on “Preparing for Transition” on 14th February 2014 at the college. The lecture was specially meant for the final year students, who are about to start their professional life.

ALUMNI UPDATESMr. Sanjeev Kumar Yadav (B.Sc. DT, 1988) is working as Director, Supply Chain in Nestle Bangladesh Ltd, Dhaka since September 2013.

Ms. Aparna Gupta (B. Tech. DT, 2001) has joined as Assistant Professor (Food Technology) at Lady

Irwin College, DU on 2nd January 2014. Earlier, she worked as lecturer at Centre of Food Science and Technology, BHU. She took her M. Sc. and Ph. D in Dairy Chemistry from NDRI, Karnal.

Mr. Rohit B. Chauhan, (B. Tech. DT, 2006) is now Senior Dairy Project Coordinator, Silliker Australia, Blackburn, VIC 3130. He joined Silliker in November 2012.

Mr. Sameer Sadani (B. Tech. DT, 2010) is currently rendering his services to own business as Production Incharge at Frosty Ice cream, Sonam Industries, Goa. He has opened a retail Ice cream parlour chain in Pune in the name of Frozen flavours.

Mr. Jignesh Prajapati (B. Tech. DT, 2010) has completed his M.Sc. in Food safety and Quality Management from Greenwich University, London. He will be very soon rendering his services to IFFCO, Oil and Fat Division, UAE as Production Executive.

Mr. Dhiren Shah (B. Tech. DT, 2009) is working in Mother Dairy, Gandhinagar in Ice Cream Section since February 2010 as R&D cum Production Incharge. Recently he is promoted to the post of Senior Officer.

Mr. Harshad R Joshi (B.Sc. DT, 1992) is currently working as Deputy CEO for Mahi Milk Producer Company, a company of Saurashtra and Kutch Milk producer, Rajkot.

Mr. Gopal Shukla (B.Sc. DT, 1987) is working as Quality Assurance Manager in Zerega Pasta, New Jersey. Zerega Pasta is the first Pasta Company established in 1848 in USA, manufacturing more than 300 varieties of Pasta.

Ms. Jahnavi N. Pandya (B. Tech. DT, 2004; M.Tech. DT, 2012) has joined SUMUL Dairy, Surat as Executive officer (QA) since September 2013. Previously she served Vidya Dairy.

Mr. Nikhil Kapoor (B. Tech. DT, 2000) has joined Cargill Foods India, Sales and Business Development in January 2014.

Mr. Anil Verma (B. Tech. DT, 2000) has joined Pernod Ricard India Pvt. Ltd. as Manager (Quality Assurance) in May 2014.

Shri Ish Patel

Shri Ishwarlal B. Patel is our BSc (DT) of 1969 batch. After brief working at Sumul Dairy, Surat, he went to USA for his Graduate studies. He completed MS (Food Science & Technology) at the University of California in 1972 where his thesis topic was related to Cellulolytic Bacteria involved in sloughing spoilage of olives. At the same university, he continued his post graduate studies in the field of Food Microbiology doing research on pectinolytic thermophillic bacteria’s enzyme kinetics for few more years. After finishing studies, he accepted the job as a Quality Assurance Manager in one of the largest pickle industry in California and developed a new process of purging nitrogen gas during pickle fermentation. In 1980, he resigned from job and became a full time Hotel Owner/Operator in Tennessee. Today, his company under Vision Hospitality Group, Inc. (A Hotel Development and Management co.) based in Chattanooga, Tennessee operates and manages over 30 properties in South-eastern States.

Shri Ish Patel is an example of a successful researcher turned into a powerful businessman. At present he is Chairing Vision Hospitality group with his two sons, Mitch Patel as CEO and Aman Patel as Executive Vice President.

Alumni association is proud of Shri Ish Patel and wishes him grand success in his future endeavours.

Dr. Girish B. PatelDr. Girish B. Patel graduated with a B.Sc. (DT) degree with distinction in 1969 from our college. He then served as Lecturer in Dairy Technology at our college for one year. In August 1970, he turned down admission in the first batch of students (selected from applicants across India) in the newly created Post-graduate Program for Management in Agriculture at the Indian Institute in Management (Ahmedabad), to accept a scholarship to undertake post-graduate studies at the University of Saskatchewan in Saskatoon (Canada). He obtained his M.Sc. degree in 1972 (effect of bacterial counts of raw milk on the keeping-quality after pasteurization), and Ph.D. in 1974 (metabolism and flocculation of brewing yeast). He joined the National Research Council Canada (NRCC), in Ottawa (Ontario), as a post-doctorate fellow in August 1974, and was employed as a research scientist in 1976.

Dr. Girish is former Group Leader of Infections and Immunity Group (2003 – 2010), and Manager of the Bacterial Culture Facility (1994 – 2013) at the former Institute for Biological Sciences (now Human Health Therapeutics Portfolio) at NRCC. Currently he is a Principal Research Officer, within the Host-Pathogen Interactions Team in the Vaccine Program. During his almost 40 years of research career at the NRCC, Girish has worked on the biological conversion of biomass to useful products such as methane, hydrogen, ethanol etc. He has isolated several new genera and species of anaerobes. He has extensive expertise in the large-scale growth of Archaea and over the past 25 years, he has been researching the use of archaeal membrane polar lipids as vaccine adjuvants to elicit systemic and mucosal immune responses. Girish is an author of over 110 peer-reviewed scientific publications. He is an inventor on 12 issued/allowed patents, to-date, on various technologies he has helped develop at NRCC.

Dr. Girish indicates that the Dairy Science College at Anand gave him a strong foundation in different subject areas that facilitated his post-graduate academic studies and research career in Canada.

Alumni Association is proud of Dr Girish and wish him all the best in his future endeavors.

COLLEGE CURRENTS Awards and RecognitionsSMC College of Dairy Science has received “National Education Excellence Award-2014” for Best Dairy Science College in India by Earth Research Organization, Jaipur at New Delhi on 19th January, 2014.

Dr. B P Shah, Principal & Dean, SMC College of Dairy Science has received the Award of Fellow of National Academy of Dairy Science (India) for outstanding achievement and contributions in the field of Dairy Science at NDRI, Karnal on 8th February, 2014.

Dr. J B Prajapati, Professor & Head of Dairy Microbiology Department has been conferred with the Fellowship of National Academy of Dairy Science (India) at NDRI, Karnal on May 26, 2014 during academy’s convocation.

Dr. Prajapati has also been elected as the member of Zonal Executive Committee of Indian Dairy Association, West Zone for the term 2014-16.

Dr. J B Prajapati and Ms. Suja Senan, Dairy Microbiology were invited to attend “Probiotics Microbiome and Gut Function” symposium organized by Yakult India Microbiota & Probiotic Science Foundation, THSTI and Apollo Hospital during 15-16 February, 2014 at New Delhi. At this symposia, Ms. Suja Senan received second best poster paper award for the presentation of paper entitled “Influence of probiotic Lactobacillus helveticus MTCC 5463 on geriatric gut metagenome analyzed by ion torrent 16S rRNA gene amplicon sequencing” (Cash prize of Rs 30,000/-).

Dr. Subrota Hati, Assistant Professor, Dairy Microbiology has been selected as Editorial Board member of Journal of Dairy Science and Technology.

Dr. K.N. Wadhwani, Mr. B M Mehta and Dr. K D Aparnathi, Dairy Chemistry, received second prize for the poster on “Nutrients composition of kachchhi camel milk” in the ISAPM National Seminar on “New Dimensional Approaches for Livestock Productivity and Profitability Enhancement under Era of Climate Change” held during 28-30 January, 2014 at AAU, Anand.

The poster entitled “Antioxidative potential of turmeric and its associated health benefits” co-authored by Mr. Mehul Soni, Dr. Smitha Balakrishnan, Prof. A I Shaikh and Dr. K D Aparnathi received 3rd prize at National seminar on “Nutrigenomics: A promising tool for combating chronic diseases” organized by PG department of home science, SP University, Gujarat during 3-4 February, 2014.

Dr. Atanu Jana and his student Ms. Moumita Maji received the second prize in poster presentation entitled “Assessing the suitability of various forms of petha as a novel natural flavouring in Petha Ice cream” presented at the National Seminar on “Innovations in Dairy Processing in India – Post Operation Flood Scenario” organized by the Faculty of Dairy Technology, West Bengal University of Animal and Fishery Sciences, Nadia, Mohanpur during 14-15 March, 2014.

3M India FellowshipM/S 3M is a leading global manufacturer of innovative solutions that help the food industry optimize the quality and safety of their products to enable consumer protection. 3M India Limited, has instituted a fellowship for promoting the meritorious PG student of Dairy Microbiology discipline. The fellowship amount is Rs 8000/- per month for a period of six months to be given to one PG student of Dairy Microbiology department during the research work. The fellowship is managed and dispersed through alumni association.

For the academic year 2013-14, the fellowship is awarded to Ms Salma, M.Tech. (Dairy Microbiology) student.

Alumni association congratulates Ms Salma for receiving the award and M/S 3M India Ltd., for sponsoring the fellowship.

Faculty Activities

Dr. Atanu Jana, Professor, Dairy Technology, delivered an invited talk on “Pizza cheese – Recent trends, developments and future scope” at the National Seminar based on theme “Innovations in Dairy Processing in India – Post Operation Flood Scenario” organized by the Faculty of Dairy Technology, West Bengal University of Animal and Fishery Sciences, Nadia, Mohanpur during 14-15th March, 2014.

Mr. Bhavbhuti M. Mehta, Assistant professor, Dairy Chemistry presented research paper on “Evaluation of camel milk for keeping quality” in the ISAPM National Seminar on “New Dimensional Approaches for Livestock Productivity and Profitability Enhancement under Era of Climate Change” held during 28-30 January, 2014 at AAU, Anand. Mr Mehta has completed PhD in Dairy Chemistry and has submitted his thesis on “Comparative appraisal of physical, chemical, instrumental and sensory evaluation methods for monitoring oxidative deterioration of ghee” on 2nd May 2014.

Mr. Amit Kumar Jain, Assistant professor presented poster paper on ‘Evaluation of camel milk for composition and activity of selected enzymes’in the ISAPM National Seminar on “New Dimensional Approaches for Livestock Productivity and Profitability Enhancement under Era of Climate Change” held during 28-30 January, 2014 at AAU, Anand.

Dr. Subrota Hati, Assistant Professor, Dairy Microbiology was invited to deliver the lecture on “Lactic acid bacteria: A novel live ingredients and its application in food industry” in GSBTM sponsored National seminar on Microbes and Industrial Biotechnology at Saurashtra University, Rajkot on

29th March, 2014.

Ms. Suja Senan completed PhD in Dairy Microbiology and has submitted her thesis on “Metagenomic analyses of geriatric gut microbiome during probiotic Lactobacillus helveticus MTCC 5463 intervention” on 13th May 2014.

Staff club of SMC College had organized annual day function on the Republic day 26th January 2014. Many cultural events for member’s kins were organized. The members of the club enthusiastically participated in various sports events.

Visits

A foreign delegation comprising six members from Kenya Dairy Farmers Federation including its Chairman Richard Tuwei and three members from East Africa Dairy Development project of Heifer International visited Dairy Science College on 30th May 2014.

to various dairy plants in Gujarat (Mother Dairy, Poly Film Packaging Unit, Sabar dairy, Banas dairy, Dudhsagar dairy, Dudhdhara dairy, Rajkhot Dairy, Panchmahal Dairy, Sumul Dairy) and Maharashtra (Amul Dairy, Virar, Govardhan, Mahananda, Goma Engineering Pvt. Ltd.). Mr. Kunal Kadia, Assistant Professor, Dairy Technology was the tour leader. Mr. Ishtiaq Chauhan, Assistant Professor, Dairy Engineering and Mrs. Sreeja V, Assistant Professor, Dairy Microbiology were the Co-leaders.

Campus Recruitment 2014Placement of Post graduate students of SMCNDDB, Anand conducted campus interview of our Post graduate students on 3rd April, 2014 at SMC College of Dairy Science. Four students viz., Denzil Dias, Trivedi Vishal, Hitendra Raval and Ms. Lalita Oraon got selected in the same. On the basis of interview conducted by GCMMF, at their office at Anand on 12th June, 2014, four PG students from our college viz. Ms. Salma, Montu Patel, Sharad Dukare and Sunil Gajjar got selected.

10th ANNUAL CONVOCATION OF AAU The 10th Annual convocation of AAU was held on 22nd February, 2014. GOG, was the Guest of honour of the function. Chief Guest of function was the former President of India, Dr. APJ Abdul Kalam. Ms. Sequeria Silvia Jerome, was awarded fifteen gold medals and two cash prizes for her outstanding academic performance in B.Tech Dairy Technology course.Mr. Aniket Sengar, Mr. Milan Chaudhary and Ms. Kanchan Mogha were awarded two medals for securing highest OGPA in the discipline of Dairy Technology, Dairy Chemistry and Dairy Microbiology respectively for M.Tech.course.

VIDYA DAIRY NEWSFermented Milk Plant at Vidya Dairy

In order to enhance the student’s training activities, Vidya Dairy has commissioned a new “Fermented Milk Plant” which was inaugurated by Hon’ble former President of India, renowned Indian Scientist, Bharat Ratna Dr APJ Abdul Kalam on 22nd January, 2014 in the august presence of Hon’ble minister of state for Agriculture & Water Resources Shri Govindbhai Patel, Principal of Dairy Science College, Anand and Chairman Vidya Dairy Dr. BP Shah; Managing Director, GCMMF Shri RS Sodhi; Managing Director, Amul Shri Rahul Kumar Shrivastava; Representative of NDDB and other distinguished guests from dairy fraternity. On this occasion, Shri D R Shah, Managing Director, Vidya Dairy briefed about the dairy plant and the various activities being carried out in the plant by dairy science students. So far Vidya Dairy has trained 897 students. The plant has attained the status of a company in 1998 under section 25 of Companies Act 1956 and is strongly supported by NDDB, GCMMF, Amul Dairy

Parents’ Meet

A Parents’ Meet was organized by Vidya dairy on 22nd April 2014 at SMC College of Dairy Science. Dr. JM Dave, Founder Chairman of Vidya Dairy; Dr. BP Shah, Chairman, Vidya Dairy; Shri Alok Johri, Commissioner of Income Tax (Appeal), Income Tax Office, Ahmedabad; Shri Sangram R. Chaudhary, Executive Director, NDDB; Dr. K. Rathnam, I/C Managing Director, KDCMPUL graced the occasion. Since 2008, Vidya dairy has started to celebrate Parents’ Meet for students at the end of their training in Vidya dairy. The meet is designed to honour and enable the parents of the current Vidya dairy trainees to meet the faculty, other parents and students and visit the dairy plant and the hostel where their wards live for a year. During the function the parents are asked to give their feedback and ask questions. Students with 100% attendance, best group, highest Kaizeners and winners of various competitions are rewarded in the presence of their parents. This is perhaps the only forum where they can interact with their counterparts and faculty of the college regarding the wellbeing and future of their wards and this may be a unique event for any

undergraduate students / college.

Vidya dairy has been shortlisted for the Gujarat Cleaner Production Award 2011-12 for adoption and successful implementation of Cleaner Production and showing exemplary work in forms of Water and Energy Conservation, Waste Water and Solid Waste Reduction etc. A committee of Officials from Gujarat Cleaner Production Centre, Gujarat

Pollution Control Board, National Productivity Council, Ministry of Environment, visited Vidya Dairy on 19th May 2014 for the verification. The awardees will get one year additional consent from Gujarat Pollution Control Board.

Vidya dairy has been selected by Bureau of Energy Efficiency for the Certificate of Merit in the National Energy Conservation Award – 2013 organized by Ministry of Power, Government of India in the Dairy Sector.

Mr. Jasu Mahida, a Vidya dairy c o n t r a c t u a l worker has been awarded the ‘Shram Vir’ award for the Category “Industrial Safety, manufacturing – Welfare & Peace”.

ObituaryOur alumnus (B. Sc. DT 1987) Dr. Koushik Seetharaman passed away at Hennepin County Medical Center in Minneapolis on June 2, 2014. He died due to a sudden cardiac arrest while swimming in a pool at a private residence. He was Professor and Chair at University of Minnesota Food Science Department.Alumni Association prays Almighty for eternal peace of the departed soul.

Dr J R Patel Memorial Charitable Trust set-up in the fond memory of our first principal is doing several activities for our students. Fellowships are given to needy students of the college from each year. Toppers of every semester also get cash prizes from the trust. JR Patel Memorial awards were given in the categories of dairy industry professional as well as academic and research. Trust also organizes Dr. J R Patel Memorial lecture every year.

DonationsMs Suja Senan donated Rs 25,000/- to Dr JR Patel Trust to institute a cash prize for the best performing B.Tech. (DT) student in Dairy Microbiology subjects.

THE AWARDS FROM DR. JR PATEL TRUST

Dr. JR Patel Memorial Charitable Trust has instituted following two awards for the alumni and faculty members of SMC College of Dairy Science.

1. ‘Dr. JR Patel Memorial Award for Education and Research’

2. ‘Dr. JR Patel Memorial Award for Dairy/ Food Professionals’

Each award comprise of a cash amount of Rs. 1001, a shawl and a citation. The purpose and spirit of these awards is to recognize outstanding contributions in India or abroad, of an educationist and/or researcher and professional as an individual or as a team. Contributions of 10 years proceeding the year for which applications are invited will be considered for the award. The claim of achievements/contributions by the candidate(s) must be duly supported by documentary evidences/publications etc.

Nominations are invited in prescribed formats for both the awards for the years 2013 and 2014. Application forms can be obtained from Dr PS Prajapati, Secretary, JR Patel Trust, SMC College of Dairy Science, AAU, Anand – 388 110, or get soft copy by sending a mail to [email protected] or can be downloaded from www.smcalumni.net.These awards will be given in a ceremony at the Alumni Convention scheduled on 9th January 2015. The last date for receiving the completed application forms is November 29, 2014.

Donations given to Dr JR Patel Trust are exempted from Income Tax U/s 80 (G). Alumni are requested to generously donate to the Trust. We would like to initiate fellowship for P.G. students too.
