History of Sushi
The original type of sushi, known today as nare-zushi (, ) was firstdeveloped in Southeast Asia possibly along what is now known as the Mekong River and
then spread to southern China before introduction to Japan.The term sushicomes from an
archaic grammatical form no longer used in other contexts; literally, sushi means "sour-
tasting", a reflection of its historic fermented roots. The oldest form of sushi in Japan,narezushi, still very closely resembles this process, wherein fish is fermented via being
wrapped in soured fermenting rice. The fish proteins break down via fermentation into its
constituent amino acids. The fermenting rice and fish results in a sour taste and also one
of the five basic tastes, called umami in Japanese. In Japan, narezushi evolved intooshizushiand ultimately Edomae nigirizushi, which is what the world today knows as "sushi".

Contemporary Japanese sushi has little resemblance to the traditional lacto-
fermented rice dish. Originally, when the fermented fish was taken out of the rice, onlythe fish was consumed and the fermented rice was discarded. The strong tasting and
smelling funazushi, a kind of narezushi made near Lake Biwa in Japan, resembles the
traditional fermented dish. Beginning in the Muromachi period (AD 13361573) of Japan,
vinegar was added to the mixture for better taste and preservation. The vinegaraccentuated the rice's sourness and was known to increase its shelf life, allowing the
fermentation process to be shortened and eventually abandoned. In the following centuries,
sushi in Osaka evolved into oshi-zushi. The seafood and rice were pressed using wooden
(usually bamboo) molds. By the mid 18th century, this form of sushi had reached Edo(contemporary Tokyo).
The contemporary version, internationally known as "sushi", was created by Hanaya
Yohei (17991858) at the end of the Edo period in Edo. The sushi invented by Hanaya wasan early form of fast food that was not fermented (therefore prepared quickly) and could
be eaten with one's hands at a roadside or in a theatre. Originally, this sushi was known asEdomae zushibecause it used freshly caught fish in the Edo-mae(Edo Bay or Tokyo Bay).
Though the fish used in modern sushi no longer usually comes from Tokyo Bay, it is stillformally known as Edomae nigirizushi.

ONCE UPON A TIME
The Legend of Nyi Roro Kidul
(The Queen of South Ocean)
Once upon a time, there was a beautiful princess named Kadita. Because of her
beauty, she was called Dewi Srengenge. It means the Goddess of Sun. her father was KingMunding Wangi. Although he had a beautiful daughter, he was unhappy because he always
expected to have a son.
The king decided to marry Dewi Mutiara. He had a son from her. Dewi mutiara wanted
her son to become a king in the future. She asked the King to send his daughter away. The
King did not agree.
Dewi Mutiara called a black wizard to curse Kadita. She wanted Kaditas beautiful
body full of ulcer. Then, Kaditas body was full of ulcer. It smelled bad. The beautiful princess
cried.
The King was very sad. No one could cure his daughters illness. The King did not want
her daughter to be a rumor so he sent his daughter away.
The poor princess did know where to go. However, she had a noble heart. She did not
have any bad feeling about her stepmother. She walked for almost seven days and seven
nights. Then she came to the south ocean. The ocean was so clean and clear. She jumped into
the water and swam.
Suddenly, there was a miracle. The ocean water cured her illness. She became more
beautiful than before. She also had a power to command the whole South Ocean. She became
a fairy called Nyi Roro Kidul or The Queen of South Ocean.

1) When the fifth son was born, the man took him to the river. This time hiswife followed him although she was still weak and bleeding from giving birth.
When he threw the child in the river, the woman jumped into the river to
catch her son. Unfortunately, she could not swim. The woman and her baby
were swept away by the current and they both drowned.
2) Finally the sound of the crying woman made the man made. He grabbed aknife and jump into the river to kill her. But the poor man did know how to
swim. The current swept him away and he drowned. From that day the spirit
of La Llorona still haunts the waters and lakes.
3) The next night, the womans spirit returned to the river beside her home.She was crying and searching for the son. At first, the poor man was
terrified by the spirit of his wife. He begged her to return to the spirit
realm. But she did not hear him.
4) Once, there was a poor man who married a beautiful woman. They livedhappily. However, the man insisted that they were too poor to have any
children. When he found out his wife was pregnant, the man was very angry.
He told the woman that they could not keep the child.
